Air fryer cooking times and temperatures
Times and temperatures for 117 common foods in the air fryer, collected in one chart. The numbers come from the individual recipes, where you will also find variations for frozen food, size and thickness. Times apply to a single layer in a basket-style air fryer and are a guide: meat, poultry and fish are only done once they reach the safe internal temperature.

Safe internal temperatures
The only reliable way to know whether meat and fish are done is an instant-read thermometer in the thickest part. The temperatures below are the minimums published by the USDA Food Safety and Inspection Service (see also foodsafety.gov). Check in more than one spot, and keep the probe away from bone.
| Food | Minimum internal temperature |
|---|---|
| Poultry: whole chicken, turkey, duck, parts and ground | 165 °F (74 °C) |
| Ground beef, pork, veal and lamb (burgers, meatballs, meatloaf) | 160 °F (71 °C) |
| Beef, pork, veal and lamb: steaks, chops and roasts | 145 °F (63 °C), then rest 3 minutes |
| Fish and shellfish | 145 °F (63 °C) |
| Leftovers and casseroles | 165 °F (74 °C) |
| Ham, fresh or raw | 145 °F (63 °C), then rest 3 minutes |
| Ham, precooked: reheating | 140 °F (60 °C); 165 °F (74 °C) if not packaged in a USDA-inspected plant |
Pink beef and lamb. 145 °F (63 °C) with a 3-minute rest is the USDA minimum for steaks, chops and roasts. Many cooks prefer medium-rare at 130–135 °F (54–57 °C), which is a matter of taste and falls below the USDA recommendation. Ground meat is different: it should always reach 160 °F (71 °C) because bacteria from the surface are mixed through the whole piece.
Rules of thumb
- 325 °F for cakes, muffins, eggs and anything that has to cook through without getting dark.
- 375 °F for meat, chicken, fish and most everyday dishes.
- 400 °F for french fries, potatoes, vegetables and skin that should turn crisp.
- Frozen: same temperature, but 30–60 percent more time. Shake or flip the basket along the way.
- From oven to air fryer: 25 °F lower and about 20–25 percent shorter.

Questions and answers
What temperature should I use in an air fryer?
Most foods cook at 350–400 °F. Chicken and meat usually go in at 375–400 °F, while french fries, potatoes and vegetables that should turn crisp are cooked at 400 °F. Cakes and other baked goods bake at about 325 °F so they cook through before the surface gets too dark.
Do I need to preheat the air fryer?
It is recommended for meat, fish and anything that should be crisp. Three to five minutes of preheating gives more even cooking and a better crust. For reheating and convenience foods it matters less.
How much longer does frozen food take in an air fryer?
Plan on 30–60 percent more time than for the fresh version, and shake or flip the basket a few times along the way. Meat and poultry must always reach the safe internal temperature, whether or not they started out frozen.
Can I use oven times in an air fryer?
As a rule of thumb, lower the temperature by 25 °F and shorten the time by 20–25 percent compared with a convection oven. Always check a few minutes early, because air fryers differ in wattage.
Why do times vary between air fryers?
Basket size, wattage and how full the basket is all change the cooking time. A crowded basket restricts airflow and takes longer. The times here are a guide and apply to a single layer in a standard basket-style air fryer.
