Why the air fryer works for pita chips
Pita is a thin, yeasted flatbread with a lot of air inside, which makes it a good candidate for dry heat. In the air fryer, hot air passes over both sides of every wedge, so the water in the bread evaporates fast and the surface turns crisp in a few minutes. You do not need to heat a full oven for a handful of chips, and one tablespoon of oil is enough for three pitas.
The same speed is also the main risk. A thin pita wedge can go from golden to burnt in less than a minute, and the lightest pieces can move around with the fan. Cut the pita into even wedges, cook in a single layer and shake the basket once. With those habits, air fryer pita chips are reliably crisp and taste like freshly baked chips rather than packaged ones.
How to make pita chips in the air fryer
Tap a time to start a timer.
- Cut the pita Stack the pitas and cut them into 8 wedges each with a sharp knife or kitchen shears. If the pockets separate easily, split each pita into two thin rounds first. Thinner pieces become crisper, but also brown faster.
- Season Toss the wedges in a large bowl with the oil, salt, garlic powder, oregano and paprika until each piece has a light, even coat. Use your hands for the best coverage.
- Preheat and load Preheat the air fryer to 350 °F for . Spread about half of the wedges in the basket in a loose single layer. Overlapping chips steam and stay soft.
- Cook Cook for , shaking the basket after 2 to . Watch the last minute closely, because pita goes from golden to dark in seconds. The chips are ready when they are golden brown and the edges look dry.
- Cool and repeat Move the chips to a wire rack or plate. They crisp further as they cool for . Cook the second batch the same way.

Tips
- Cut evenly. Wedges of the same size brown at the same speed. Kitchen shears are faster and cleaner than a knife.
- Season while they are oily. Salt and spices stick best to a thin coat of oil, so season in the bowl rather than after cooking.
- Cool before storing. Chips that are sealed while warm trap steam and turn soft.
What to serve with pita chips
Serve pita chips with hummus, baba ganoush, tzatziki or spinach dip, or crush them over a fattoush salad. They also make a crunchy side for soup. For a snack board, add raw vegetables, olives and roasted tomatoes, or serve them next to falafel. For other crispy snacks, try kale chips or potato chips, and browse the snack recipes for more ideas.
Storing and reheating
Store completely cooled pita chips in an airtight container at room temperature for up to 5 days. If they soften, reheat them in the air fryer at 320 °F for 1 to 2 minutes, then let them cool for a minute. Do not refrigerate them, since the moisture in the refrigerator makes chips soft. You can also freeze uncooked, cut pita for up to 2 months and season it right before cooking.
Variations
- Cinnamon sugar: Toss the wedges with 1 tbsp melted butter, 1 tbsp sugar and ½ tsp cinnamon, then cook at 350 °F for 4 minutes (not dairy-free or vegan). Serve with fruit dip or yogurt.
- Parmesan and herb: Replace the paprika and oregano with 2 tbsp grated Parmesan and ½ tsp dried parsley, and cook for 4 minutes (not dairy-free or vegan).
- Za'atar: Season with 1 tbsp za'atar instead of the oregano and paprika for a Middle Eastern flavor.
- Pizza chips: Add ½ tsp Italian seasoning and a pinch of garlic powder, then serve with warm marinara for dipping.
If it does not turn out right
- The chips are chewy in the middle
- They were too thick or overlapped in the basket. Split the pita into two thin rounds and cook in a single layer. Add 1 more minute if needed.
- Some chips burn while others stay pale
- Cut wedges the same size and shake the basket halfway. Thin edges brown quickly, so pull the batch when most pieces are golden.
- Chips blow around the basket
- Light wedges can lift with the fan. Do not overfill the basket, and keep the chips well below the top so they cannot touch the heating element.
Questions and answers
How long do pita chips take in the air fryer?
About 5 minutes at 350 °F, shaking halfway. Thin chips from a split pita need 3 to 4 minutes, and thick wedges may need 6 minutes.
