Ribs in the Air Fryer
Ribs usually mean hours of low heat in an oven or smoker, but air fryer ribs get tender in about 40 minutes per batch if you wrap them first. The foil steams the meat until it is soft, and a final blast of dry heat sets a sticky BBQ glaze. This guide covers baby back pork ribs in the air fryer, plus times for riblets, country-style ribs and leftovers.

Why the air fryer works for ribs
Ribs are tough because of collagen and connective tissue around the bones. It takes slow, moist heat to turn that into soft gelatin, which is why classic ribs cook for hours. Wrapping the rack in foil gives you that moist environment in a small package, and the air fryer then heats it quickly and evenly. After about 30 minutes the meat is tender, and unwrapping lets the surface dry and caramelize.
This two-stage method also solves the biggest problem with air fryer ribs, which is dry meat. Cooked bare in fast air, ribs lose moisture before the collagen breaks down. Steaming first and browning last gives you both texture and tenderness in under an hour.
How to make ribs in the air fryer
Tap a time to start a timer.
- Trim and cut Turn the rack bone side up and slide a knife under the thin membrane at one end. Grip it with a paper towel and pull it off in one piece. Cut the rack into 3 or 4 sections of 3 to 4 bones, so each fits flat in the basket.
- Rub Brush both sides of each section with the mustard, which helps the seasoning stick. Mix the brown sugar, paprika, salt, garlic powder, onion powder and pepper, and press the rub generously into the meat.
- Wrap Wrap each section tightly in a sheet of aluminum foil, crimping the edges so no steam escapes. The foil must be fully sealed around the meat so it cannot lift in the airflow.
- Cook wrapped Preheat the air fryer to 375 °F for . A 5–6 qt basket holds about half a rack, so cook the packets in two rounds. Cook each round for , and keep the first round wrapped and warm.
- Glaze and finish Unwrap the ribs carefully, as steam escapes, and place them meat side up in the basket. Brush with the BBQ sauce and cook at 375 °F for 8 to more (per round), until the glaze is sticky and the meat is tender. A thermometer between the bones should read about 195 °F.
- Rest Let the ribs rest for , then cut between the bones.

Tips
- Remove the membrane. The thin silvery skin on the back of the rack stays tough and blocks the rub. It peels off easily with a paper towel for grip.
- Season ahead. Rub the ribs up to 12 hours before cooking and keep them in the refrigerator. The salt and sugar work into the meat.
- Glaze late. Sugar burns in a hot air fryer, so sauce goes on only at the end.
Which ribs to buy
Baby back ribs are shorter, leaner and cook faster, so they are the easiest choice for a 4 to 6 qt air fryer. Spare ribs and St. Louis style ribs are larger and fattier, and they need 10 to 15 minutes more. Country-style ribs are not true ribs but meaty strips from the shoulder, and riblets are short pieces cut from spare ribs. Boneless pork ribs are a similar cut and cook in about the same time as country-style. For other pork cuts, try pork chops or pulled pork.
What to serve with ribs
Ribs call for classic barbecue sides, such as coleslaw, cornbread, mac and cheese and baked beans. For something from the air fryer, add corn on the cob or potato wedges, and keep plenty of napkins nearby.
Storing and reheating
Leftover ribs keep for 3 to 4 days in a sealed container in the refrigerator, or 2 to 3 months in the freezer. To reheat ribs in the air fryer, wrap them loosely in foil and heat at 350 °F for 5 to 7 minutes, then unwrap and brush with fresh sauce for the last 2 minutes. Reheated ribs should reach 165 °F in the center.
Variations
- Dry rub only: Skip the sauce and serve the ribs as they come out after the unwrapped stage. Add 1 tsp chili powder to the rub for heat.
- Honey garlic: Replace the BBQ sauce with 3 tbsp honey, 2 tbsp soy sauce and 2 cloves minced garlic, brushed on in the last 5 minutes.
- Short ribs: Beef short ribs cook the same way, wrapped in foil at 350 °F for 45 to 50 minutes, then unwrapped for 8 minutes to brown.
If it does not turn out right
- The ribs are tough
- They need more time wrapped. Pork ribs are safe at 145 °F, but the connective tissue only softens at 190–203 °F. Add 10 minutes in the foil and test again.
- The BBQ sauce burns
- Sauce with a lot of sugar scorches in dry heat. Brush it on only in the last 8 to 10 minutes, and lower the heat to 350 °F if the edges darken.
- The rack does not fit
- Cut it into smaller sections. A 6 qt basket takes about half a rack at a time, and a 4 qt basket takes a section of 3 bones.
Questions and answers
How long do ribs take in the air fryer?
Baby back ribs take about 40 minutes per batch at 375 °F, 30 minutes wrapped in foil and 8 to 10 minutes glazed. Spare ribs need 10 to 15 minutes longer.
What temperature should pork ribs reach?
The USDA minimum for pork is 145 °F, but ribs are chewy at that point. For fall-off-the-bone ribs, aim for 195 °F, which is when the meat pulls away from the bone.
Can I cook ribs from frozen in the air fryer?
Thaw raw ribs in the refrigerator first for even cooking. Fully cooked frozen ribs can go in the basket, wrapped in foil, at 350 °F for 20 to 25 minutes.
Do I need to wrap air fryer ribs in foil?
Wrapping gives the most tender result because the ribs steam in their own juices. Without foil, cook at 360 °F for 25 to 30 minutes and expect a chewier bite with a firmer bark.
