Why the air fryer works for rack of lamb

A rack of lamb is the tender rib section, a small cut with a lot of surface and a thin layer of fat. Roasting it in a regular oven means heating a large chamber for a 20-minute cook. The air fryer reaches 400 °F in 3 minutes, and the moving air browns the fat and herbs while the meat inside stays rosy. The result is close to a restaurant sear, with a lot less trouble.

The main limit is size. A standard rack of 8 ribs, about 1½ pounds, fits a 5–6 qt basket if you curve it, and a smaller machine needs the rack cut into halves. How to make rack of lamb in the air fryer

Tap a time to start a timer.

  1. Prepare the rack Take the lamb out of the refrigerator before cooking. Pat it dry. If the fat cap is thick, trim it to about ¼ inch. If the rack is too long for the basket, cut it into two sections of 4 ribs.
  2. Season Rub the mustard and oil over the meat, then the garlic, rosemary, thyme, salt and pepper. Press the herbs on so they stay in place.
  3. Protect the bones Wrap a small piece of foil tightly around the exposed bone tips so they do not burn. Keep the wrapped tips well below the heating element, and never put foil in the basket without food or weight.

Tips

  • Buy a frenched rack. The bones are already cleaned, which looks neat and saves trimming time.
  • Let it come to room temperature. A rack that sits out for 30 minutes cooks more evenly than one straight from the refrigerator.
  • Rest before carving. Five minutes keeps the juices inside. Cut between the bones with a sharp knife.

Herb crust version

For a crunchy crust, mix ¼ cup panko, 1 tsp chopped parsley and 1 tbsp melted butter. After the first 10 minutes of cooking, brush the meat with a little more mustard and press the crumbs on, then cook for 5–8 more minutes until the crust is golden (not gluten-free or dairy-free).

  • Pistachio crust: Press 3 tbsp finely chopped pistachios onto the mustard for the last 6 minutes.

If it does not turn out right

The outside is dark but the center is raw
The rack was cold or very thick. Let it sit out for 30 minutes first, and lower the heat to 375 °F for another 3–4 minutes, then check again.
The rack does not fit
Cut it in half between two bones, or curve it into a C. Racks over 1½ lb fit best in a 5.8 qt or larger machine.
The herbs burned
Fine dried herbs and garlic char at 400 °F. Use fresh herbs with a layer of mustard and oil, and add a crumb crust only partway through (see the herb crust version below).
