Why the air fryer works for plantains
Plantains are starchy bananas, and their flavor depends on ripeness. A green plantain is firm and savory, like a potato. As the skin yellows and then blackens, the starch turns to sugar, and the fruit becomes soft and sweet. Traditional recipes pan-fry slices in a lot of oil to caramelize those sugars. The air fryer does the same job with hot, circulating air, so the sugar on the cut surface browns and sets into a sticky, almost candy-like edge while the inside stays creamy.
That is why this recipe uses very ripe plantains, with skin that is mostly black. At 400 °F, the sugars caramelize in 10 minutes. For firmer, savory plantains, use green ones and follow the tostones method further down.

- Peel the plantains Trim both ends, then cut a shallow slit along the length of the skin. Peel it away with your thumb or the tip of a knife. Ripe plantains peel more easily than green ones.
- Slice Cut the plantains on a diagonal into slices about ½ inch thick. Thicker slices stay soft inside, and thinner ones turn crisp and dry.
- Season Toss the slices in a bowl with the oil, salt and cinnamon until every piece is lightly coated.
- Preheat Preheat the air fryer to 400 °F for .
- Cook Place the slices in a single layer with a little space between them. Cook for , flipping each piece after . They are ready when the edges are dark golden, with sticky, caramelized spots.
- Serve warm Let the plantains cool for on the plate, since the sugars are very hot. Sprinkle with a pinch of extra salt if you like.

Tips
- Ripen at room temperature. Place green plantains in a paper bag for a few days. They are ready when the skin is mostly black and the fruit gives slightly when pressed.
- Cut on the diagonal. Diagonal slices have more surface area, so you get more caramelized edge per piece.
- Do not crowd the basket. Slices that touch will stick together and steam, so cook in two batches if needed.
What to serve with plantains
Sweet plantains are a classic side with rice and black beans, grilled chicken, pulled pork or shrimp, and they balance spicy food well. They also work as a dessert-style snack with a spoon of vanilla ice cream or a drizzle of honey. For a full meal, serve them with chicken breast and sweet potatoes, or browse the vegetables category for more side dishes.
Storing and reheating
Cooked plantains keep in a sealed container in the refrigerator for up to 3 days. Reheat in the air fryer at 375 °F for 3–4 minutes to bring back the caramelized edges. The microwave makes them soft and wet. Uncooked, peeled slices can be frozen on a tray and stored in a bag for up to 3 months, then cooked from frozen.
Variations
- Sprinkled with lime: Squeeze fresh lime juice over the hot slices and sprinkle with flaky salt for a sweet and salty finish.
- Spicy-sweet: Add ⅛ tsp cayenne to the oil and salt mixture.
- Plantain chips: Slice green plantains paper-thin and cook at 350 °F for 10–14 minutes, shaking often, until crisp.
- With honey: Drizzle with 1 tbsp honey in the last minute, or serve the honey on the side (not vegan).
How to make tostones in the air fryer
Tostones are twice-cooked green plantains, crisp outside and starchy inside. Peel a green plantain (score the skin with a knife, then pry it off), cut it into 1-inch slices and toss with 1 tsp oil. Cook at 350 °F for 6–8 minutes until softened and lightly pale gold. Remove them and press each piece flat to about ¼ inch with the bottom of a glass or a small plate. Brush with a little oil, sprinkle with salt and cook again at 400 °F for 6–8 minutes, flipping once, until crisp and golden. Serve at once with garlic sauce, mojo or guacamole.
If it does not turn out right
- The plantains are starchy and not sweet
- They were not ripe enough. For sweet plantains, wait until the skin is mostly black with some yellow, which usually takes a week at room temperature.
- The slices burn on the edges
- Ripe plantains have a lot of sugar. Lower the temperature to 375 °F, add 1–2 minutes, and check after 6 minutes.
- The slices stick to the basket
- Brush the basket lightly with oil, and use a thin spatula to flip. Wait until the slices have browned before turning them.
Questions and answers
How long do plantains take in the air fryer?
Ripe sweet plantain slices take about 10 minutes at 400 °F, flipped halfway. Thicker slices of 1 inch take 12–14 minutes, and frozen ripe slices take 10–12 minutes.
Can you make tostones in the air fryer?
Yes. Cook 1-inch slices of green plantain at 350 °F for 6–8 minutes, smash each one flat, then cook again at 400 °F for 6–8 minutes until crisp and golden.
Can you cook air fryer plantains without oil?
Yes, but they brown less and may stick. A light spray or even 2 teaspoons of oil is enough for a whole batch, so the oil adds little.
How do I know when a plantain is ripe?
Green plantains are starchy and savory, yellow ones are semi-sweet, and plantains with mostly black skin are soft and sweet. Use the black-spotted ones for maduros.
