Haddock in the Air Fryer

Haddock is a mild, slightly sweet white fish and a New England classic, usually baked or fried. Air fryer haddock gives you the crisp crust of fried fish with a fraction of the oil, and each batch is ready in about 10 minutes. This recipe uses a panko coating, and it covers a no-breading version, frozen fillets and smoked haddock.

Why the air fryer works for haddock

Haddock is a lean cold-water fish with flaky, delicate meat. In the traditional fish fry, a wet batter protects it from the hot oil. In the air fryer, dry breading is enough, because the hot air dries and browns the crumbs while the fish steams gently in its own moisture. The result is a crisp crust and tender flakes with far less oil than deep frying.

Lean fish has a short cooking window, so the thermometer is useful here. The fish is safe at 145 °F, and past about 155 °F the meat starts to dry out. If you cook in batches, keep the first batch on a wire rack in a 200 °F oven, not covered, so the crust stays crisp.

How to make haddock in the air fryer

Tap a time to start a timer.

  1. Dry the fish Pat the haddock fillets dry on both sides with paper towels, and cut any very large fillets in half crosswise so they fit the basket.

Tips

  • Press the crumbs on. Pressing firmly, rather than patting, helps the panko stay on during the flip.
  • Cut large fillets. Haddock fillets can be long. Cut them into portion-sized pieces for even cooking and easier handling.
  • Season every layer. Bland fish needs salt in the flour or the crumbs, not just at the end.

Fish and chips, bites and smoked haddock

For an American-style fish and chips, serve breaded fillets next to crispy french fries with tartar sauce and malt vinegar. Cut into 1-inch pieces, haddock bites or goujons cook in 5–6 minutes, which makes them good for kids or game day. Smoked haddock is already cured and has a stronger flavor. Cook it at a lower temperature, brush it with butter and serve with poached eggs or over rice.

What to serve with haddock

Haddock goes well with coleslaw, tartar sauce, onion rings and a squeeze of lemon. For vegetables, green beans or broccoli cook at the same temperature. A similar white fish, cod, works well with the same method, and a baked potato with butter is a good side.

Storing and reheating

Cooked haddock keeps for 2 days in a sealed container in the refrigerator. Reheat it in the air fryer at 350 °F for 3–4 minutes until it reaches 165 °F in the center. Do not use the microwave for breaded fish, which turns it soggy.

Variations

  • Cornmeal crust: Swap the panko for ½ cup yellow cornmeal for a Southern-style crust.
  • Lemon herb: Add 1 tsp lemon zest and 1 tbsp chopped parsley to the panko.
  • Spicy: Add ½ tsp cayenne and 1 tsp Old Bay to the panko mixture.

If it does not turn out right

The crumb coating is soggy
Mist the panko well on both sides, cook in one layer and always preheat. Do not stack the fillets while they wait.
The haddock is dry
Haddock is lean. Check at 8 minutes, and take it out at 145 °F. Thin tail pieces cook faster than thick center cuts.
The fillets stick to the basket
Brush or mist the basket with oil before adding the fish, and wait for the crust to set before you flip.
