Tuna Steak in the Air Fryer
Tuna steak is lean, which means it goes from tender to dry in a minute or two. Air fryer tuna steak cooks fast and evenly, so you get a seared outside and a moist center in about 8 minutes at 400 °F. A short soy and lime marinade adds flavor, and the time chart covers ahi, yellowfin and frozen steaks from rare to well done.

Why the air fryer works for tuna steak
Tuna has the texture of a lean steak, with almost no fat to protect it. That is why it is easy to overcook in the oven and why pan-searing needs a very hot skillet and quick timing. In the air fryer, strong hot air sears the outside in a few minutes and cooks the thickness gently, so the middle stays moist. The basket is small, which also keeps heat consistent from steak to steak.
A thin marinade helps here too, because it adds flavor and a little oil to the surface. Keep the marinating time short so the lime juice does not change the texture of the fish, and keep the steak at least 1 inch thick so it has time to brown before the center is done.
How to make tuna steak in the air fryer
Tap a time to start a timer.
- Marinate Whisk the soy sauce, olive oil, lime juice, sesame oil, garlic and ginger in a shallow dish. Add the tuna and turn it to coat. Marinate for in the refrigerator, and no longer than 30, because the acid turns the surface mushy.
- Dry and coat Lift the steaks out and pat them lightly with paper towels. Press the sesame seeds onto both sides. Discard the leftover marinade.
- Preheat Preheat the air fryer to 400 °F for . Tuna needs a hot start for a seared surface.
- Cook Place the steaks in the basket in a single layer. Cook for , flipping after , for a firm, just-cooked center. For a pink middle, cook 4 to total instead.
- Check Insert an instant-read thermometer into the thickest part. The USDA recommends 145 °F for fish, which gives opaque and flaky tuna. Many cooks prefer ahi seared and pink at 115–125 °F, which is a personal choice, and it is best with fresh sushi-grade fish.
- Rest and serve Rest the steaks for , then slice against the grain and serve with extra lime.

Tips
- Choose thick steaks. Steaks 1 inch thick or more work best. Thin steaks under ¾ inch overcook before they brown, so cut the time to 3 to 5 minutes.
- Buy the right fish. Look for deep red, moist flesh with no brown spots or fishy smell. For rare tuna, buy fish sold as sushi-grade or safe for raw eating.
- Pull early. Carryover heat adds a few degrees after the steak comes out, so remove it just before your target.
Tuna steak vs. other steaks
Tuna steaks are cut from the loin of the fish, which is why they look and slice like beef. They also cook faster, so use a different time than meat. If you want beef instead, see steak in the air fryer. For other fish, salmon and fish fillets have their own guides, and the air fryer cooking times chart lists more.
What to serve with tuna steak
Tuna goes well with light, fresh sides. Try asparagus or broccoli cooked in the same basket before the fish, or serve it over rice with sliced cucumber and avocado. A drizzle of soy sauce mixed with a little mayonnaise and sriracha makes a simple dipping sauce.
Storing and reheating
Cooked tuna keeps for 2 days in a sealed container in the refrigerator and is best eaten cold in salads or sandwiches. If you reheat it, use the air fryer at 300 °F for 2 to 3 minutes only, or until it reaches 165 °F, though the fish will be firmer. Never keep raw or rare tuna longer than a day in the refrigerator.
Variations
- Pepper-crusted: Press 1 tbsp coarsely cracked black pepper onto the steaks instead of the sesame seeds, and skip the ginger.
- Lemon herb: Marinate in olive oil, lemon juice, garlic and dried oregano for 15 minutes, and cook with the same times.
- Tuna bites: Cut the steak into 1-inch cubes, marinate them and cook at 400 °F for 3 to 4 minutes, shaking once.
If it does not turn out right
- The tuna is dry and chalky
- It cooked too long. Tuna is very lean, so every minute counts. Cut the time to 4 to 5 minutes for a pink center and check early.
- The sesame seeds fall off or burn
- Press them firmly into the fish after patting it dry, and use only a thin layer. Seeds that drop to the bottom of the basket can burn, so shake out the loose ones first.
- The surface is gray instead of seared
- The steak was wet or the air fryer was not preheated. Pat off excess marinade and always preheat.
Questions and answers
How long do you cook tuna steak in the air fryer?
At 400 °F, a 1 inch steak takes 4 to 5 minutes for rare to medium-rare, 6 to 7 for medium and 8 to 10 for well done. Flip halfway through.
