Crispy Tacos in the Air Fryer

Crispy tacos in the air fryer have a shell that shatters when you bite it and a hot, cheesy beef filling, with no deep fryer. Seasoned ground beef and cheese go inside a corn tortilla, which is folded, brushed with oil and air fried until golden. Eight tacos take about 35 minutes, including the filling.

Why the air fryer works for crispy tacos

A crispy taco has two textures: a shell that crunches and a filling that stays hot and juicy. Deep frying delivers both, but it uses a lot of oil and makes a mess. In the air fryer, the hot air dries the outside of the corn tortilla and turns it into a crisp shell, while the cheese inside melts and holds the beef in place.

Filling the tortilla before cooking, instead of using a hard shell, gives you a taco that is crisp on the outside and tender inside, in the style of tacos dorados. Moisture is the enemy of crispness, so the beef should be cooked down until it is thick, not soupy. A thin brush of oil on the outside is all the shell needs to brown.

  1. Cook the beef Brown the ground beef in a skillet over medium-high heat for , breaking it up. Drain most of the fat, then stir in the chili powder, cumin, paprika, garlic powder and salt. Add the water and simmer for until it thickens. The beef must reach 160 °F. Let it cool for .
  2. Soften the tortillas Stack the tortillas, wrap them in a damp paper towel and microwave for 30 seconds so they fold without cracking.
  3. Fill Place about 2 tbsp of cheese on half of each tortilla, then 3 tbsp of beef, then a little more cheese. Fold the tortilla in half and press the edge firmly. The melted cheese acts as a glue.
  4. Oil and preheat Preheat the air fryer to 380 °F for . Brush both sides of each taco lightly with the oil.
  5. Cook Place 4 tacos flat in the basket in a single layer with space between them. Cook for , flipping carefully with tongs after , until the shells are golden and crisp. Repeat with the other 4 tacos.
  6. Serve Rest the tacos for , then open them and add lettuce, salsa and sour cream, or serve them closed with the toppings on the side.

Tips

  • Cool the filling. Hot, wet filling softens the shell from the inside. Let it sit for 5 minutes before you assemble.
  • Use a little cheese as glue. Place cheese on both sides of the beef so the taco stays closed.
  • Do not overcrowd. Four tacos at a time is plenty. Crowding blocks the air and leaves soft spots.

What to serve with crispy tacos

Classic toppings are shredded lettuce, diced tomato, salsa, sour cream and a squeeze of lime. For a full dinner, add rice and refried beans, or crunchy potato wedges on the side. For game day or a taco night, serve with crispy french fries and a bowl of queso. You can find more weeknight ideas in the dinner category.

Storing and reheating

Store leftover cooked tacos in an airtight container in the refrigerator for up to 3 days, with the toppings kept separate. Reheat in the air fryer at 350 °F for 3–4 minutes until the shell is crisp and the filling is hot, at least 165 °F in the center. Uncooked, filled tacos can be frozen on a tray, bagged, and cooked from frozen at 360 °F for 12–14 minutes.

Variations

  • Chicken tacos: Use 2 cups of shredded cooked chicken mixed with 2 tbsp salsa and the same seasoning.
  • Black bean and cheese: Mash a can (15 oz) of drained black beans with cumin and use them in place of the beef for a vegetarian version.
  • Potato tacos: Fill with seasoned mashed potatoes and cheese, a classic Mexican-American filling.
  • Hard shell tacos: Fill pre-formed shells, stand them in the basket and warm for 3–4 minutes at 350 °F.

If it does not turn out right

The shells crack when folding
Warm the tortillas under a damp paper towel in the microwave for 30 seconds, or dip them briefly in hot water. Fold right away while they are pliable.
The tacos are greasy
Drain the beef well and use only a thin brush of oil on the shell. Too much oil makes the shell greasy instead of crisp.
The tacos open up in the basket
Do not overfill, and press the edge firmly so the cheese seals it. Flip them gently with tongs once the shells have set, after about 4 minutes.

Questions and answers
