Chicken Tikka in the Air Fryer

Air fryer chicken tikka gives you tender, yogurt-marinated chicken with the charred edges of a tandoor in about 12 minutes of cooking. The yogurt, lemon and spices tenderize the meat and brown quickly in the hot, dry air. Serve the pieces with rice and naan, thread them on skewers, or simmer them in a sauce for chicken tikka masala.

Why the air fryer works for chicken tikka

Authentic tikka is cooked in a tandoor, a clay oven that reaches temperatures far above a home oven. That blast of dry heat chars the marinade quickly while the inside stays moist. A basket air fryer is not a tandoor, but it is the closest everyday appliance, because the fast moving air at 400 °F browns the yogurt coating in minutes and leaves the chicken juicy.

The marinade does a lot of the work. The lactic acid in the yogurt and the lemon juice tenderize the surface, and the spices cling to the meat, so the pieces taste seasoned all the way through. Thighs hold up best, though breast works if you watch the temperature. For a plainer approach to skewered meat, see chicken skewers in the air fryer.

Tap a time to start a timer.

  1. Mix the marinade In a large bowl, stir together the yogurt, lemon juice, oil, ginger, garlic, garam masala, cumin, paprika, turmeric, cayenne and salt until smooth.
  2. Marinate Add the chicken and turn to coat each piece. Cover and refrigerate for at least 2 hours, or up to 12 hours. Do not go longer than 24 hours, because the yogurt acid makes the texture mushy.
  3. Preheat Preheat the air fryer to 400 °F for . Lift the chicken from the bowl and let the extra marinade drip off, so only a thin coat remains.
  4. Cook Place the chicken in a single layer with a little space between the pieces; cook in two batches if your basket is small. Cook for , shaking after , until the edges are charred in spots. Add the onion wedges for the last .
  5. Check and rest Insert an instant-read thermometer into the thickest piece. It should read at least 165 °F; thighs are more tender at 175 °F. Rest for , then top with cilantro and a squeeze of lemon.

Tips

  • Drain the marinade. A thin coat chars, and a thick one steams. Let the extra drip off before the pieces go in the basket.
  • Use thighs when you can. The fat in dark meat keeps pieces tender even if they cook a minute too long.
  • Add a pinch of sugar. A half teaspoon in the marinade helps with the char if your air fryer runs cool.

What to serve with chicken tikka

Basmati rice, warm naan and a cucumber raita are the classic partners, with sliced red onion and lemon wedges on the side. For a lighter plate, serve the chicken in a bowl with chickpeas, such as chickpeas in the air fryer, and a simple salad. Cooked cauliflower, such as cauliflower in the air fryer, also takes well to the same spices.

Storing and reheating

Keep cooked tikka in a sealed container in the refrigerator for 3 to 4 days. Reheat it in the air fryer at 350 °F for 4–5 minutes, until it reaches 165 °F in the center. It is also good cold in wraps and salads, or simmered in a quick tomato cream sauce. You can freeze the raw marinated chicken for up to 2 months.

Variations

  • Tikka with breast: Use 1½ lb of chicken breast cut into 1½-inch pieces, and cook for 10–12 minutes. Take it out at 165 °F to avoid dryness.
  • Vegetable tikka: Use the same marinade on cauliflower florets or firm tofu, and cook for 10–12 minutes at 400 °F.
  • Tikka wraps: Wrap the pieces in warm flatbread with raita, sliced onion and cilantro for a quick lunch.

If it does not turn out right

The chicken is pale instead of charred
Too much marinade is clinging to the surface. Let it drip off, or wipe lightly, and use 400 °F. A thin coat browns, and a thick one steams.
The pieces are dry
Breast dries quickly, so use thighs or cook breast only to 165 °F. Pieces cut too small also overcook, so keep them around 1½ inches.
The tikka is bland
Marinate longer and salt the marinade fully. The salt carries the spices into the meat, and 4 to 12 hours works best.

Questions and answers

How long does chicken tikka take in the air fryer?

Thigh pieces of 1½ inches take about 12 minutes at 400 °F, shaken halfway. Breast pieces take 10–12 minutes, and whole bone-in thighs need 22–24 minutes at 380 °F.

What temperature should chicken tikka reach?

The USDA safe minimum for chicken is 165 °F in the thickest piece. Thigh meat is more tender if you go a little past it, to about 175 °F.

Can I make chicken tikka masala from this?
