Tips
- Remove the silver skin. This tough membrane shrinks as it heats and bends the tenderloin into a curve that browns unevenly. A thin knife takes it off in under a minute.
- Do not crowd the basket. Leave a finger's width of space around each piece so the hot air can reach every side. In a 4 qt basket, cook one tenderloin at a time.
