Air Fryer Tofu

Air fryer tofu is the easiest way to get crunchy edges and a chewy center without a pan full of oil. A light coat of cornstarch and 15 minutes at 400 °F turn plain extra-firm tofu into golden cubes for rice bowls, stir-fries and salads. Why the air fryer works for tofu

Tofu is mostly water held in a soft protein gel, and the whole job of cooking it crisp is getting that water out without letting the inside turn rubbery. A pan needs a lot of oil to do that. The air fryer pushes hot, dry air across every side of each cube, so the moisture leaves quickly and the surface dries into a crust with just a tablespoon of oil.

Cornstarch does the rest. It pulls moisture from the surface, then sets into a thin, brittle shell as it heats, which is why air fryer tofu stays crunchy longer than tofu that was only oiled. Extra-firm or super-firm tofu gives the best texture, because the block holds its shape after pressing.

How to make tofu in the air fryer

Tap a time to start a timer.

  1. Press the tofu Drain the block and wrap it in a clean kitchen towel or several paper towels. Set a heavy skillet or a few cans on top and press for at least . Pressing removes water, and less water means a crispier crust.
  2. Cut into cubes Pat the block dry once more and cut it into ¾-inch cubes. Cubes that are much smaller dry out, and cubes that are much larger stay soft in the center.

Tips

  • Cut cubes the same size. Uneven pieces finish at different times, so small ones turn dark while large ones are still pale.
  • Do not skip the shake. Moving the cubes halfway lets the sides that rested against the basket brown too.
  • Add sauce last. Teriyaki, buffalo or sweet chili sauce is best stirred in off the heat, right before serving, so the crust does not go soft.

What to serve with tofu

Air fryer tofu is a natural fit for a rice bowl with steamed broccoli and a drizzle of soy sauce, or a weeknight stir-fry where the cubes go in at the very end. It also works in salads, in lettuce wraps and in tacos with a quick slaw. Roasted mushrooms make a good partner for a meatless dinner.

Storing and reheating

Keep cooled tofu in a sealed container in the refrigerator for up to 4 days. The crust will soften in the fridge, but it comes back in the air fryer. Reheat at 375 °F for 4–5 minutes, shaking once, until hot and crisp again. Do not freeze cooked tofu if you want it crunchy, although uncooked frozen and thawed tofu has a chewier texture that many people like.

Variations

  • Sesame ginger: Add 1 tsp sesame oil and ½ tsp ground ginger to the soy sauce, and finish with sesame seeds.
  • Buffalo: Toss the cooked cubes in a few tablespoons of hot sauce mixed with melted butter (not vegan or dairy-free) or vegan butter.
  • Barbecue: Brush the cubes with barbecue sauce for the last 2 minutes only, since the sugar burns quickly at 400 °F.
  • Nutritional yeast: Add 1 tbsp to the cornstarch mix for a savory, nutty flavor and a deeper golden color.

Which tofu to buy

Look for tofu labeled extra-firm or super-firm, packed in water. Firm tofu works if you press it longer, up to 30 minutes. Silken tofu is too delicate for the air fryer and falls apart. A 14 oz block makes about 3 servings, and an average 5–6 qt basket handles one block in a single batch. If you are doubling the recipe, cook two batches rather than piling the cubes up, because crowding steams the tofu and costs you the crunch.

If it does not turn out right

The tofu is soft instead of crispy
The block held too much water or the basket was crowded. Press for at least 15 minutes, dry the cubes well and leave space between them. Extra-firm or super-firm tofu works best, silken tofu does not.
The cornstarch coating looks chalky
Too much cornstarch was used or it was not mixed in. Use 2 tablespoons for a 14 oz block, and toss until no white powder is left on the sides of the bowl.
The cubes stick to the basket
Preheat the air fryer first and lightly oil the basket. Wait until the tofu has crusted, about 7 minutes, before the first shake.

How long do you cook tofu in the air fryer?

About 15 minutes at 400 °F for ¾-inch cubes, shaking halfway. Smaller ½-inch cubes need 10–12 minutes, and thick steaks or slabs need 16–18 minutes, flipped once.

Can you make air fryer tofu without cornstarch?

Yes. Skip it and use the same oil and seasoning, and add 2–3 minutes of cook time. The crust will be thinner and chewier but still golden. A tablespoon of nutritional yeast tossed in with the spices adds a savory, cheesy note.

Do you have to press tofu before air frying?

Pressing is optional but worth the 15 minutes. Unpressed tofu can still be cooked, but it releases steam and ends up chewier, so add 3–5 minutes and expect a softer crust.

Can I use oil spray instead of olive oil?

Yes. A light mist of oil from a spray bottle works, and so does cooking without oil if the tofu is well coated in cornstarch. The oil mainly helps browning.
