Chicken Fajitas in the Air Fryer

Air fryer chicken fajitas cook the chicken, peppers and onions together in one basket at 400 °F in about 12 minutes. The hot air gives the vegetables charred edges and keeps the strips of chicken juicy, with no skillet splatter and almost no cleanup. It is a quick weeknight dinner with all the toppings on the table in 25 minutes.

Why the air fryer works for chicken fajitas

A classic fajita comes off a screaming-hot skillet, with chicken that browns fast and vegetables that blister at the edges. The air fryer copies that effect in a smaller space. Strong air movement at 400 °F sears the surface of the strips and chars the peppers, while a thin layer of oil carries the spices without much splatter.

Cooking the chicken and vegetables together saves time and dishes, but it works only if the pieces are cut to a similar thickness. Peppers and onions take about 12 minutes to soften and char, which is also the time ½ inch chicken strips need to cook through. Shake the basket every few minutes so the food browns on every side, rather than sitting in one place.

How to make chicken fajitas in the air fryer

Tap a time to start a timer.

  1. Slice everything evenly Cut the chicken against the grain into strips about ½ inch wide and 3 inches long. Slice the peppers and onion into strips of about the same width so they cook in the same time.
  2. Season Put the chicken, peppers and onion in a large bowl. Add the oil, chili powder, cumin, paprika, salt and garlic powder and toss until everything is evenly coated. Squeeze in the juice of half the lime.
  3. Preheat Preheat the air fryer to 400 °F for .
  4. Cook and shake Spread the mixture in the basket in an even layer, without packing it; in a 4 qt basket, cook in two batches. Cook for , shaking the basket or stirring every , until the chicken is cooked and the edges of the vegetables are charred.
  5. Check the chicken Insert an instant-read thermometer into the thickest strips. They must read at least 165 °F. Return the basket for if they do not.
  6. Warm the tortillas and serve Wrap the tortillas in aluminum foil, crimped tightly, and warm them in the air fryer at 350 °F for . Squeeze the remaining lime over the filling and serve with sour cream, guacamole and cilantro.

Tips

  • Pat the chicken dry. Surface moisture steams the chicken instead of browning it.
  • Cut against the grain. Short muscle fibers make the strips tender when you bite into the fajita.
  • Add the lime at the end. Acid can turn chicken mealy if it sits for too long, so use only half of the lime before cooking and squeeze the rest over the finished filling.

Chicken breast or thighs

Both work in this recipe. Breasts are leaner and need careful timing, while boneless thighs stay tender even if they cook a minute or two longer. For more on each cut, see chicken breast in the air fryer and chicken thighs in the air fryer. Pieces from either cut should reach 165 °F.

What to serve with chicken fajitas

Put out warm tortillas, sour cream, guacamole, shredded cheese, salsa and lime wedges, and let everyone build their own. Serve rice and beans on the side, or make nachos from the leftover tortillas and filling. Corn on the cob with chili and lime is a good match for a Tex-Mex night.

Storing and reheating

Store the cooked filling in a sealed container in the refrigerator for 3 to 4 days. Reheat it in the air fryer at 350 °F for 3–4 minutes, until it reaches 165 °F. Leftover fajita filling is also good in quesadillas, omelets and burrito bowls.

Variations

  • Cajun: Replace the chili powder and cumin with 1 tbsp Cajun seasoning.
  • Spicy: Add 1 sliced jalapeño to the peppers, or ¼ tsp cayenne to the spice mix.
  • Low-carb: Skip the tortillas and serve the filling in lettuce cups or over cauliflower rice.

If it does not turn out right

The chicken is dry
Strips cut thinner than ½ inch cook too fast. Cut them thicker, take them out at 165 °F, or use boneless thighs, which stay juicier.
The vegetables are soggy instead of charred
The basket was too full, which makes the vegetables steam. Spread them in an even layer, cook in two batches if needed, and shake often.
The seasoning is bitter
Too much spice or burnt oil is the cause. Use the amounts listed, and do not exceed 400 °F.

Questions and answers

How long do chicken fajitas take in the air fryer?

About 12 minutes at 400 °F for strips ½ inch thick, shaken every 4 minutes. Thin strips need 8–10 minutes, and frozen strips 14–16 minutes.

What temperature should chicken fajitas reach?

The chicken must reach 165 °F in the thickest piece, according to the USDA. Check a few strips, since they cook at different speeds.

Can I use frozen vegetables for chicken fajitas?

Yes. Frozen pepper and onion strips can go straight into the basket with the chicken, but add 2–3 minutes and drain any excess water first. They will be softer than fresh.

Can I make chicken fajitas with chicken thighs?

Yes. Boneless thighs are juicier and more forgiving than breasts. Slice them into strips and cook for the same 12 minutes, until they reach 165 °F.

How do I reheat chicken fajitas in the air fryer?

Place the filling in the basket at 350 °F for 3–4 minutes, until it reaches 165 °F. Warm the tortillas separately so they stay soft.
