Why the air fryer works for turkey tenderloin
Turkey tenderloin is the small muscle that lies under the breast. It is nearly fat-free, which makes it healthy-sounding and quick to dry out. The air fryer suits it well: the fast, circulating heat browns the outside in minutes, so the inside does not have time to lose its moisture the way it does in a 45-minute oven roast.
Because the cut is thin and even, the timing is predictable. Two 12 oz tenderloins fit side by side in a 4–6 qt basket, and the 20-minute window is short enough that an instant-read thermometer makes the result nearly foolproof. Turkey tenderloin in the air fryer is also a good starting point for meal prep, since the slices work in salads, wraps and rice bowls.

Tips
- Trim the tendon. The thin white strip along one side is chewy. Remove it with the tip of a sharp knife before you season.
- Marinate for 30 minutes. Lean meat takes well to a short marinade. Use olive oil, lemon juice, garlic and herbs, then pat the surface dry before cooking.
- Rest before slicing. Five minutes lets the juices settle, so the first slice is as moist as the last.
What to serve with turkey tenderloin
Serve slices with mashed potatoes and gravy, or go lighter with a green salad and roasted sweet potatoes. Broccoli goes into the basket for the last 8 minutes, so the whole dinner finishes together. For a Thanksgiving-sized roast, see turkey breast.
Storing and reheating
Leftover turkey keeps for 3 to 4 days in a sealed container in the refrigerator. Reheat whole pieces in the air fryer at 320 °F for 4–5 minutes, or slices for 2–3 minutes, until they reach 165 °F. Cold slices are good in sandwiches and chopped into salads.
Variations
- Bacon-wrapped: Wrap each tenderloin in 3–4 slices of bacon and secure with toothpicks. Cook for 24–28 minutes and check for 165 °F.
- Lemon-herb: Replace the paprika with the zest of one lemon and 1 tsp dried oregano.
- Honey mustard: Brush with equal parts Dijon mustard and honey during the last 3 minutes.
- Turkey bites: Cut the tenderloin into 1-inch cubes and cook at 375 °F for 8–10 minutes, shaking halfway.
If it does not turn out right
- The turkey is dry
- Tenderloin has almost no fat, so a few minutes too long matters. Take it out at 165 °F and rest it for 5 minutes. A quick marinade of oil, lemon juice and garlic also helps.
- There is a tough white strip in the middle
- That is a tendon that runs along each tenderloin. Slide a thin knife under it and cut it away before seasoning, or slice around it when serving.
- The seasoning slides off or burns
- Pat the surface dry first so the oil and spices stick, and avoid sugar-heavy rubs at 375 °F, which scorch.
