Potato Skins in the Air Fryer

Air fryer potato skins are the crisp, cheesy game day appetizer you usually get from a restaurant, made at home with four russets. The shell is baked until fluffy, scooped, brushed with oil and crisped at 400 °F before the cheddar and bacon go in. If you already have leftover baked potatoes, the skins take about 10 minutes per batch.

Why the air fryer works for potato skins

A good potato skin has three layers of texture: a crunchy shell, a thin layer of soft potato and a gooey topping. In the oven the shell takes 20 minutes or more to dry out, and the underside can stay soft. In the air fryer, hot air hits the inside and the outside of the shell at once, so a brushed, scooped shell turns crisp in 8 minutes.

Russet potatoes are the right choice here. Their thick, sturdy skin holds up to scooping and stays crisp, and their fluffy flesh bakes evenly. The shortcut is to start with leftover baked potatoes, which are drier and crisp even faster.

  1. Bake the potatoes Scrub the potatoes, pierce each one several times with a fork and rub with a little of the oil. Place them in the basket and cook at 400 °F for , until a knife slides in easily. Let them cool for .
  2. Halve and scoop Cut each potato in half lengthwise. Scoop out the flesh with a spoon, leaving a ¼-inch layer so the shells keep their shape. Save the scooped potato for another use, such as mashed potatoes.
  3. Oil and season Brush the outside and inside of the shells with the remaining oil, then sprinkle with the salt and pepper.
  4. Crisp the shells Place 4 halves in the basket skin side down and cook at 400 °F for . Flip them and cook for 3 more minutes, until crisp.
  5. Fill and melt Flip the shells back so the skin is down, fill with the cheddar and bacon, and cook for until the cheese melts. Repeat with the remaining halves.
  6. Top and serve Finish with the sour cream and scallions and serve hot.

Tips

  • Choose russets. Waxy potatoes have thin skin that tears when scooped. Pick potatoes of about the same size so they bake at the same pace.
  • Crisp before you fill. Cooking the empty shells first is what makes them crunchy. Adding cheese from the start steams the skin.
  • Use the scooped potato. The flesh makes excellent mashed potatoes, or it can be mixed with cheese and bacon and returned to the shells for a heartier skin.

Potato skins or baked potatoes?

Potato skins start with a baked potato, but the finished dish is different: halved, scooped, crisped and topped. If you want a whole fluffy potato with a soft skin, see baked potatoes in the air fryer. Mini potatoes are great for bite-size skins; the cooking is covered in mini potatoes. Sweet potatoes also work, with a slightly shorter time; see sweet potatoes.

What to serve with potato skins

Serve the skins as an appetizer on game day with chicken wings, nachos and onion rings. With a green salad or coleslaw, they also make an easy weeknight dinner. Ranch dressing, sour cream and hot sauce are the classic dips.

Storing and reheating

Store cooled skins in a sealed container in the refrigerator for up to 3 days. Reheat in the air fryer at 350 °F for 4 to 5 minutes, until the shells crisp and the cheese melts. Bacon should be hot all the way through, and a reading of 165 °F is the safe target for leftovers.

Variations

  • Buffalo chicken: Fill with shredded cooked chicken tossed in buffalo sauce and cheese.
  • Broccoli cheddar: Fill with chopped steamed broccoli and extra cheddar instead of bacon.
  • Mini skins: Use small potatoes, halve and scoop, and cook the shells for 4 minutes at 400 °F before filling.

If it does not turn out right

The skins are soft and not crisp
The potato was not dried or oiled enough. Brush both sides with oil and give the empty shells their own 8 minutes in the basket before adding the filling.
The skins tear when scooped
Let the baked potatoes cool for 5 minutes, then leave a ¼-inch layer of potato in the shell instead of scraping to the skin.
The cheese burns
Add the filling only for the last 2 minutes, and keep the temperature at 400 °F or below.
