Flounder in the Air Fryer
Flounder is thin and delicate, so it often falls apart in a pan and overcooks in the oven. Air fryer flounder is quick and gentle, with a crisp panko crust and tender, flaky meat in about 8 minutes. This recipe covers breaded flounder, a version with no breading and times for thin and frozen fillets.

Why the air fryer works for flounder
Flounder is a flatfish with thin, fine-textured flesh and a mild, slightly sweet taste. Its thinness is the challenge. In a skillet, the fillet can break when you turn it, and in the oven the edges dry out before the center is ready. In the air fryer, the hot air cooks both sides at once, so the thin fillets are done in a few minutes and the breading crisps without any extra fat.
The panko matters here. Flounder has very little structure of its own, and a crisp crust gives each fillet some support and texture. Panko is coarser than regular bread crumbs, so it stays crisper in the air fryer, as long as it is sprayed with oil to help it brown.
How to make flounder in the air fryer
Tap a time to start a timer.
- Set up a breading station Put the flour in one shallow dish, beat the eggs in a second and mix the panko with the paprika, garlic powder, salt and pepper in a third.
- Dry the fish Pat the flounder very dry with paper towels. Dry fish holds the flour, and the flour holds the egg.
- Bread the fillets Dredge each fillet in the flour, shake off the excess, dip it in the egg and press it firmly into the panko on both sides.
- Preheat and spray Preheat the air fryer to 400 °F for . Spray both sides of the fillets generously with cooking spray.
- Cook Place 2 fillets in a single layer and cook in two batches. Cook each batch for , flipping carefully after with a wide spatula.
- Check and serve The crust should be golden. An instant-read thermometer in the thickest part should read 145 °F. Serve with the lemon wedges.

Tips
- Fold the thin ends. Tuck the tail under so the fillet has an even thickness.
- Keep the basket uncrowded. Two fillets fit side by side in most baskets. Leave a little gap, so the air can reach all the crumbs.
- Do not marinate the fish. Thin fillets turn mushy in acidic marinades. Season right before cooking and squeeze lemon at the end.
Thin, whole and stuffed flounder
Thin fillets, which are common in stores, cook in 5–6 minutes without breading. A small whole flounder (about 1 lb) takes 12–15 minutes at 380 °F, flipped halfway, and is done when the flesh near the bone is opaque. For stuffed flounder, spoon a mixture of crab and bread crumbs onto the fillet, roll it up and cook at 360 °F for 12–14 minutes, until it reaches 165 °F in the stuffing. For a fish with a similar mild taste, see cod.
What to serve with flounder
Flounder goes with classic fish fry sides, such as coleslaw, tartar sauce and French fries. From the air fryer, try crispy french fries or green beans. A light salad or asparagus also works if you want something fresh.
Storing and reheating
Cooked flounder keeps for 2 days in a sealed container in the refrigerator. Reheat it in the air fryer at 350 °F for 3–4 minutes until it reaches 165 °F in the center. The crust will crisp again, though the fish will be slightly drier.
Variations
- Lemon pepper: Replace the paprika in the panko with 1 tsp lemon pepper.
- Parmesan: Add 3 tbsp grated Parmesan to the panko.
- Cornmeal crust: Swap the panko for ½ cup yellow cornmeal and add ½ tsp cayenne for a Southern-style fish fry.
If it does not turn out right
- The fillet breaks when you flip it
- Flounder is very delicate. Use a wide fish spatula, flip only once and avoid moving the fillet before the crust has set, about 4 minutes.
- The crumbs fall off
- Pat the fish dry, press the panko on firmly and give the coated fillets 5 minutes to rest before cooking.
- The fish is dry
- Thin flounder cooks in 6–8 minutes. Check early and take it out at 145 °F.
