Granola in the Air Fryer
Air fryer granola toasts in about 9 minutes, compared with 30 to 40 in a conventional oven, and the moving air gives you an even golden color with very little oil. This recipe makes about 3 cups of crunchy, lightly sweet granola with maple syrup, pecans and pumpkin seeds. You also get temperature and timing notes, and a trick for bigger clusters.

Why the air fryer works for granola
Granola is a simple balance of dry oats, nuts and a thin coat of sweetener. In a conventional oven the heat is gentle and still, so a sheet pan needs 30 to 40 minutes, and you have to stir it a few times anyway. The air fryer moves hot air across the whole surface, so the coating sets and the oats dry out in under 10 minutes. The small cooking chamber also means the kitchen does not heat up for a snack.
The same airflow is the reason for two rules. Use a pan, because oats and seeds are small enough to drop through the basket holes or blow against the heating element. And stir often, because the fan browns whatever sits on top and along the edges first. Done properly, you get even toasting and a crisp texture once the granola cools. Making granola in the air fryer works best in small batches of about 3 cups, which is also the right size for a 4 to 6 qt basket.

- Mix the coating In a large bowl, stir the maple syrup, oil, brown sugar, cinnamon, salt and vanilla until smooth. The mixture should look like thin caramel.
- Coat the oats and nuts Add the oats, pecans and pumpkin seeds and fold until every piece is lightly glossy. Do not leave dry patches of oats, because those toast unevenly.
- Preheat and fill the pan Preheat the air fryer to 300 °F for . Spread the granola in a 7-inch round baking pan or shallow oven-safe dish that fits your basket, about ¾ inch deep. Loose oats would fall through the basket holes, so always use a pan.
- Toast and stir Cook for , stirring every and moving the edges toward the center, since the outer ring browns first. The granola is ready when it is golden and fragrant. It will still feel soft.
- Cool for crunch Remove the pan, stir in the cranberries and press the granola down gently with a spatula for clusters. Let it cool for without touching it. It crisps as it cools.

Tips
- Cool it completely. Hot granola feels soft and chewy. The sugar hardens as it cools, so wait the full 20 minutes before you judge it or break it up.
- Add fruit at the end. Dried cranberries, raisins and apricots burn and turn bitter in the air fryer. Stir them in after toasting. Chocolate chips melt, so add them after the granola has cooled.
- Measure the sweetener. Too much syrup makes the granola sticky and slow to crisp. About 3 tbsp for 1½ cups of oats gives light clusters without a candy coating.
What to serve with granola
Spoon it over plain yogurt with fresh berries, or into a bowl with cold milk for a quick weekday breakfast. It is also good on top of baked apples, warm oatmeal or a sliced banana. For a heartier morning, serve a small bowl alongside pancakes or a muffin from the same appliance. See the breakfast recipes for more ideas.
Storing and reheating
Once the granola is completely cool, store it in an airtight jar or container at room temperature for up to 2 weeks. For longer storage, freeze it for up to 3 months. If it softens in humid weather, spread it in the pan and heat it at 300 °F for 2 minutes, stirring once, then let it cool again. Because the granola contains nuts and dried fruit, keep it dry and out of the refrigerator, where moisture makes it chewy.
Variations
- Honey and almond: Swap the maple syrup for honey and the pecans for sliced almonds. Use 275 °F for 14 minutes, since honey browns faster (not vegan).
- Chocolate granola: Add 1 tbsp unsweetened cocoa powder to the coating. After cooling, stir in ¼ cup dairy-free mini chocolate chips.
- Tropical: Replace the pumpkin seeds with unsweetened coconut flakes added for the last 2 minutes, and use chopped dried mango instead of cranberries.
- Nut-free: Leave out the pecans and use ⅓ cup more oats plus 2 tbsp sunflower seeds. This also works for school snack rules.
If it does not turn out right
- The granola is soft after cooling
- It needs more time or it was spread too thick. Return it to the pan at 300 °F for 2 more minutes, stirring once, then cool it completely, uncovered, before storing.
- The edges burn while the middle is pale
- Stir more often, every 2 minutes, and keep the layer under 1 inch deep. Lower the temperature to 275 °F if your air fryer runs hot.
- There are no clusters
- Press the warm granola flat with a spatula and leave it alone while it cools. Break it into pieces afterward. A little extra maple syrup helps pieces stick together.
Questions and answers
How long does granola take in the air fryer?
About 9 minutes at 300 °F, stirring every 3 minutes. At 275 °F plan on 14 to 16 minutes. Granola crisps as it cools, so judge it by color and smell, not by crunch.
What temperature is best for air fryer granola?
300 °F works for most basket air fryers. Hotter than 325 °F tends to scorch the nuts and the sugar before the oats dry out.
Can I make air fryer granola with no oil or no coconut oil?
Yes. This recipe uses a neutral oil, no coconut oil. To skip oil entirely, replace it with 1 tbsp more maple syrup. The granola will be a little harder and less rich.
Can I make granola bars in the air fryer?
Press the warm granola into a lined pan with 2 tbsp of warm peanut butter and chill it for 1 hour. The bars set in the refrigerator, not in the air fryer.
