Why the air fryer works for fried green tomatoes

A green tomato is firm, tart and full of water, which makes it a good candidate for frying: the slices hold their shape while the inside softens. In a deep fryer the crust forms in hot oil. In the air fryer, fast-moving 380 °F air dries the surface of the breading and browns it, while a light coat of cooking spray stands in for the oil. The cornmeal gives the crunch, and the panko adds a lighter, shatter-crisp layer on top.

The trade-off is that air frying cannot set a wet batter, so this recipe uses the classic dredge, dip and press method. The three-step coating is also why the slices should be dry before they are breaded, and why you should never stack them while they wait. For a gluten-free version, swap the flour and panko for a gluten-free flour blend and crushed cornflakes, and check that the cornmeal is labeled gluten-free.

How to make fried green tomatoes in the air fryer

Tap a time to start a timer.

  1. Slice and salt Cut the tomatoes into ⅓-inch slices, discarding the thin end pieces. Lay the slices on paper towels, sprinkle with ½ tsp salt and let them sit for , then blot the tops dry. This pulls out surface water so the breading sticks.
  2. Set up three bowls Put the flour in one shallow bowl. Whisk the eggs and buttermilk in a second. In a third, mix the cornmeal, panko, the remaining ½ tsp salt, paprika, garlic powder and pepper.
  3. Bread the slices Dredge each slice in flour and shake off the excess, dip it in the egg mixture, then press it firmly into the cornmeal mixture on both sides. Set the slices on a rack or plate for a few minutes so the coating sets.
  4. Preheat and spray Preheat the air fryer to 380 °F for . Spray the breaded slices generously on both sides until no dry flour shows. The spray is what turns the cornmeal golden.
  5. Cook Arrange 6 to 8 slices in a single layer without touching, and air fry for , flipping carefully after and spraying any pale spots. Repeat with the second batch.
  6. Serve right away The slices are done when the crust is deep golden and a fork slides in easily. Move them to a wire rack for and serve hot with ranch or remoulade.

Tips

  • Pick the right tomatoes. Choose hard, fully green tomatoes. A blush of pink means a softer slice that will turn mushy. Heirloom or standard slicing tomatoes both work.
  • Season every layer. Salt the slices first, then season the crumbs. Plain breading tastes flat against the tart tomato.
  • Cook in batches. Six to eight slices fit in a 5 to 6 qt basket. Overlapping slices steam and the crust sticks together.

What to serve with fried green tomatoes

Serve the slices warm with ranch, remoulade or a spicy mayo for dipping. They work as a game day appetizer or as a side next to chicken breast, grilled shrimp or a plate of green beans. For a Southern-style lunch, stack two slices with bacon and lettuce on toasted bread. If you have ripe tomatoes on hand, roasted tomatoes are a different dish with a soft, sweet result.

Storing and reheating

Fried green tomatoes are best eaten within 20 minutes of cooking. Leftovers keep for 2 days in the refrigerator in a container lined with a paper towel. Reheat them at 350 °F for 4 to 5 minutes in a single layer until they are hot in the center and the crust crisps again. Do not freeze cooked slices, but you can freeze the breaded raw slices on a tray and then bag them for up to 1 month; cook them from frozen, adding 3 to 4 minutes.

Variations

  • No cornmeal: Replace the cornmeal with more panko, or crushed cornflakes for a stronger crunch.
  • Spicy: Add ½ tsp cayenne and 1 tsp hot sauce to the egg mixture.
  • Vegan: Use plant milk with 1 tbsp cornstarch whisked in place of the eggs and buttermilk, and spray generously.
  • Cherry tomatoes: Bread whole or halved green cherry tomatoes and cook for 7 to 8 minutes at 380 °F, shaking the basket halfway.

If it does not turn out right

The breading falls off
The tomato was wet or the coating was not pressed on. Blot the salted slices dry, press the crumbs firmly and let the breaded slices rest for 5 minutes before cooking. Do not flip them until the crust has set at the 6-minute mark.
The crust is pale or dry in spots
The spray missed those areas. Coat both sides until the crumbs look damp, and do not crowd the basket, which blocks airflow.
The slices are mushy inside
The tomatoes were too ripe or sliced too thin. Choose firm, fully green tomatoes and cut them ⅓ inch thick.

Questions and answers

How long do you cook fried green tomatoes in an air fryer?

About 12 minutes at 380 °F, flipping halfway. Thinner slices of ¼ inch need 9 to 10 minutes. Cook until the crust is deep golden.

Can you make air fryer fried green tomatoes with no egg?

Yes. Brush the floured slices with buttermilk or plant milk mixed with a spoonful of mustard instead of egg, then press on the crumbs. The crust is slightly less sturdy, so handle the slices gently.

How do you reheat fried green tomatoes in the air fryer?

Heat them at 350 °F for 4 to 5 minutes in a single layer until crisp again. The microwave makes the crust soggy, so avoid it.

Can I cook frozen fried green tomatoes in the air fryer?

Yes. Cook store-bought frozen breaded slices straight from the freezer at 375 °F for 8 to 10 minutes, flipping once, until hot and crisp.
