Air Fryer Buffalo Cauliflower

Air fryer buffalo cauliflower has crisp edges, a tender center and the same tangy heat you get from wings, without the batter or deep fryer. A light cornstarch coat and 12 minutes at 400 °F make the florets crunchy, and a quick toss in hot sauce and butter finishes them. It works as a game day snack, an appetizer or a meatless main.

Why the air fryer works for buffalo cauliflower

Cauliflower is more than 90 percent water, and it can turn soft and spongy fast. The key to crunch is moving that moisture out of the surface before the inside overcooks. The air fryer does this well: hot, dry air hits each floret from all sides, and the cornstarch on the surface forms a thin, brittle crust as it dries. The edges brown and the center stays tender.

Buffalo sauce is mostly vinegar, hot sauce and butter, so it is wet. If you add it at the start, it steams the cauliflower. The better approach is to cook the florets dry first, toss them in the sauce while hot, and return them for a few minutes so the sauce thickens and clings. This is different from plain roasted florets, which you can find on the cauliflower page.

  1. Cut the florets Remove the leaves and core, then cut the cauliflower into florets about 1½ inches wide, to make about 5 cups. Keep the pieces similar in size so they cook at the same speed.
  2. Coat Toss the florets in a large bowl with the olive oil until lightly coated. Add the cornstarch, garlic powder, paprika and salt, and toss again until no dry powder remains in the bowl.
  3. Preheat Preheat the air fryer to 400 °F for .
  4. First cook Spread the florets in the basket, in as close to a single layer as you can. Cook for , shaking the basket every , until the edges are golden brown and crisp.
  5. Make the sauce While the cauliflower cooks, whisk the hot sauce and melted butter together in a large bowl.
  6. Glaze and finish Toss the hot florets in the sauce, return them to the basket and cook for 3 more minutes so the sauce sets on the surface. Serve immediately.

Tips

  • Dry the florets. After washing, pat them with a towel or let them air-dry. Wet cauliflower turns the cornstarch into paste.
  • Use plenty of space. Florets that touch steam each other. If your basket is small, cook two batches and combine them at the end.
  • Sauce to taste. The recipe is moderately hot. Use less hot sauce and a little more butter for a milder flavor.

What to serve with buffalo cauliflower

The classic pairing is celery sticks, carrot sticks and a cool dressing like ranch or blue cheese. For game day, set out a platter with chicken wings and a bowl of the cauliflower for guests who do not eat meat. It also fills a wrap or taco with shredded lettuce, or goes over rice with sliced avocado for a quick weeknight dinner.

Storing and reheating

Buffalo cauliflower is best fresh, but it keeps in a sealed container in the refrigerator for up to 3 days. Reheat in the air fryer at 375 °F for 4–5 minutes until the edges are crisp again. Add a splash of fresh hot sauce after reheating if the glaze has dulled.

Variations

  • Vegan: Use vegan butter or olive oil in the sauce, and check that the hot sauce has no animal ingredients.
  • Honey buffalo: Whisk 1 tbsp honey into the sauce for a sweet, sticky glaze (not vegan).
  • Garlic parmesan: Replace the buffalo sauce with 2 tbsp melted butter, 1 minced clove of garlic and 2 tbsp grated Parmesan.
  • Breaded wings: For a heavier crust, dip the florets in a mix of flour and milk, then in panko, and cook for 14–16 minutes before saucing (not gluten-free).

Making it a meal

A medium head of cauliflower serves four as a snack and two as a main. For a more filling dinner, serve the florets over rice or in a bowl with chickpeas, shredded carrots and a drizzle of ranch. The recipe is easy to scale: two heads need two batches, and you can toss them together in the sauce at the end.

If it does not turn out right

The cauliflower is soggy
The basket was crowded or the sauce was added too early. Cook in two batches if needed, and toss in the sauce only after the florets are crisp.
The coating is chalky
Too much cornstarch, or it was not mixed in. Use 2 tablespoons for a medium head and toss until it disappears into the oil.
The edges burn before the center is tender
The florets were too small, or the basket was too hot. Keep them at 1½ inches and lower the heat to 375 °F, adding 2 minutes.

Questions and answers

How long do you cook buffalo cauliflower in the air fryer?

About 15 minutes at 400 °F total, with 12 minutes for the crisp, then 3 minutes after tossing in sauce. Smaller florets of 1 inch need 10 minutes before saucing.

Can you make air fryer buffalo cauliflower without breading?

Yes. This recipe uses only a light dusting of cornstarch, not a flour batter. Without cornstarch, the florets brown but are less crunchy, and take 2–3 minutes longer.

How do you reheat buffalo cauliflower in the air fryer?

Heat leftovers at 375 °F for 4–5 minutes in a single layer until hot and crisp at the edges. Do not microwave, which makes them soft.

Can I cook frozen buffalo cauliflower bites in the air fryer?

Yes. Cook store-bought frozen breaded bites straight from the freezer at 400 °F for 10–14 minutes, shaking halfway, following the package.
