A whole Thanksgiving turkey will not fit in most baskets, but a turkey breast will. Air fryer turkey breast roasts in about 50 minutes, with golden skin and meat that stays juicy because the hot air cooks it so quickly. Why the air fryer works for turkey breast

A turkey breast is lean, so the gap between juicy and dry is only a few degrees. In a standard oven a 3 lb roast needs well over an hour, and the surface slowly dries out while the middle catches up. A basket air fryer moves hot air tightly around a compact roast, so turkey breast in the air fryer is ready in under an hour and the skin browns without any basting.

Size is the limit. A 3 lb breast fits a 5.5 qt basket or larger. In a 4 qt model, stay at 2 lb or less, or cut a bigger breast in half and cook the pieces one after the other. Hot air needs space to circulate, and a roast pressed against the walls cooks unevenly. A whole turkey, or a bone-in breast over 3 lb, belongs in the oven.

How to make turkey breast in the air fryer

Tap a time to start a timer.

  1. Pat dry and season Take the turkey breast out of the packaging and pat it completely dry with paper towels. If the roast comes in netting, leave the netting on so it keeps its shape. Rub the oil over the whole roast, then rub in the salt, pepper, garlic powder, paprika and thyme.
  2. Preheat Preheat the air fryer to 350 °F for . Leave at least an inch of space between the roast and the sides of the basket.
  3. Cook skin side down Place the roast in the basket with the skin side down and cook for . Starting on the skin side keeps the skin from over-browning before the inside is warm.
  4. Flip and finish Turn the roast skin side up and cook for another , until the skin is deep golden. Insert an instant-read thermometer into the thickest part. It should read 165 °F; if not, cook more and check again.
  5. Rest and slice Tent the turkey loosely with foil and let it rest for . Remove the netting, then slice across the grain into ½-inch slices.

Tips

  • Thaw completely. A partly frozen breast is the most common reason for a dry outside and a cold center. Count on about a day in the refrigerator for every 4 lb.
  • Season the night before. Rubbing the salt and spices on the day before and leaving the roast uncovered in the refrigerator seasons the meat more deeply and dries the skin, which crisps better.
  • Slice against the grain. Cutting across the muscle fibers into ½-inch slices makes even a lean breast tender.

What to serve with turkey breast

Turkey breast is a natural for a small Thanksgiving or any Sunday dinner. Serve it with mashed potatoes, gravy and cranberry sauce, plus green beans or Brussels sprouts from the same air fryer once the turkey is resting. For a smaller or quicker meal, a turkey tenderloin cooks in about 20 minutes.

Storing and reheating

Sliced turkey keeps for 3 to 4 days in a sealed container in the refrigerator, or up to 3 months in the freezer. Reheat slices in the air fryer at 320 °F for 3–4 minutes with a spoonful of broth over them, until they reach 165 °F. Cold slices make excellent sandwiches.

Variations

  • Herb butter: Slide 2 tbsp softened butter mixed with chopped sage and parsley under the skin of a bone-in breast (not dairy-free).
  • Maple and mustard: Brush the roast with 1 tbsp Dijon mustard mixed with 1 tbsp maple syrup for the last 10 minutes.
  • Mayonnaise coat: Replace the oil with a thin layer of mayonnaise for extra-even browning.
  • Cutlets: Turkey breast steaks or cutlets about ¾ inch thick cook in 8–10 minutes at 375 °F.

If it does not turn out right

The turkey breast is dry
It stayed in too long. Pull it at 165 °F; it will climb a couple of degrees while it rests. A lean breast has very little margin, so a thermometer is worth more than any timer.
The skin is pale and rubbery
The skin was wet or the roast was crowded. Pat it dry, leave space around it and finish skin side up. A thin coat of oil or mayonnaise helps the skin brown.
The outside is done but the center is cold
The breast was too large or still partly frozen. Thaw it completely in the refrigerator and keep a roast to 3 lb or less. For a bigger breast, use the oven.
