Chicken Shawarma in the Air Fryer
Air fryer chicken shawarma gets the charred edges and tender, spiced meat of a rotating spit without any special equipment. A yogurt and lemon marinade tenderizes boneless thighs, and 400 °F air gives them crisp edges in about 16 minutes. Slice the chicken for pita wraps, rice bowls or salads.

Why the air fryer works for chicken shawarma
Real shawarma is made by stacking marinated meat on a vertical spit and shaving off the outer layer as it browns. At home you can get close with a good marinade and strong heat. The air fryer supplies both a hot surface and fast-moving air, so the thin coat of spices and yogurt browns and the cut edges turn crisp, while the inside stays moist.
The yogurt in the marinade is more than flavor. Its lactic acid softens the protein gently, and its sugars (lactose) help the surface darken. Lemon juice adds more acid but too much of it for too long can make chicken mushy, which is why the marinating time is limited. Boneless thighs are the best cut, because their fat keeps them juicy at the high temperature this recipe needs.
How to make chicken shawarma in the air fryer
Tap a time to start a timer.
- Mix the marinade In a large bowl, stir together the yogurt, lemon juice, oil, garlic, cumin, paprika, turmeric, cinnamon, cayenne, salt and pepper until smooth.
- Marinate Add the thighs and turn to coat every surface. Cover and refrigerate for at least , or up to 12 hours. More time gives more flavor, but do not go past 12 hours because the lemon makes the meat mushy.
- Wipe off the excess Lift each thigh out of the bowl and scrape off most of the marinade with the back of a spoon. A thin coat browns well, while a thick coat of yogurt steams and burns.
- Cook Preheat the air fryer to 400 °F for . Lay the thighs in a single layer without overlapping; a 6 qt basket takes all the thighs at once, while a 4 or 5 qt basket needs 2 batches. Cook for , flipping after , until the edges are dark and crisp.
- Check the temperature Insert an instant-read thermometer into the thickest piece. It must read at least 165 °F. Dark meat is tender at 175 °F, if you want to cook it a bit longer.
- Rest and slice Rest the chicken for , then slice it thinly across the grain. Toss the slices with any juices on the plate.

Tips
- Choose thighs. They have more fat and tolerate high heat much better than breast meat.
- Scrape off the extra marinade. A thin layer chars nicely, while a thick one stays wet and gives off smoke.
- Slice against the grain. Thin slices feel more tender and look like the shaved meat from a shawarma stand.
What to serve with chicken shawarma
Stuff warm pita with the sliced chicken, pickled red onion, cucumber, tomato and a drizzle of garlic sauce or tahini. For a bowl, serve it over rice with hummus and a chopped salad. Roasted cauliflower or eggplant fits the same flavors.

Storing and reheating
Cooked chicken keeps for 3 to 4 days in a sealed container in the refrigerator. Reheat sliced chicken in the air fryer at 350 °F for 3–5 minutes until it reaches 165 °F. The raw marinated chicken can also be frozen in its marinade for up to 3 months and thawed in the refrigerator overnight.
Variations
- Extra smoky: Add 1 tsp smoked paprika and ½ tsp ground allspice to the marinade.
- Dairy-free: Replace the yogurt with 3 tbsp olive oil and an extra tbsp of lemon juice. This version is dairy-free, but a little less tender.
- Meal prep bowls: Slice the chicken and pack it with rice, chopped cucumber and tomatoes for lunches during the week.
If it does not turn out right
- The marinade burned
- Too much yogurt stayed on the chicken. Scrape off the excess before cooking, and lower the temperature to 380 °F if your air fryer runs hot.
- The chicken is dry
- Breasts overcook quickly at 400 °F. Use thighs, or cook breasts 12–14 minutes and take them out at 165 °F.
- The chicken lacks the char of real shawarma
- Slice the cooked chicken thinly, return it to the basket and cook 2–3 minutes at 400 °F, so the cut edges crisp.
Questions and answers
How long does chicken shawarma take in the air fryer?
About 16 minutes at 400 °F for whole boneless thighs, flipped halfway. If you cut the chicken into 1-inch strips, 10–12 minutes is enough.
Can I use chicken breast?
Yes. Cut it into ¾ inch strips and cook for 10–12 minutes at 400 °F, until the center reaches 165 °F. Breast is leaner, so check early.
Can I cook pre-marinated shawarma chicken from the store?
Yes, cook it at 380 °F for 12–15 minutes, shaking or flipping halfway, until the center is 165 °F. Pat off any extra liquid first.
How do I reheat chicken shawarma?
Spread the sliced chicken in the basket and heat at 350 °F for 3–5 minutes until it reaches 165 °F. It crisps up again.
