Lobster Tails in the Air Fryer
Lobster tails feel like a restaurant dish, but air fryer lobster tails are one of the easiest special-occasion dinners you can make. The shell protects the meat while hot air cooks it in about 8 minutes, and a spoonful of garlic butter finishes it. This guide covers times by tail size, how to butterfly the tails and how to cook them from frozen.

Why the air fryer works for lobster tails
Lobster meat is lean and delicate, and it turns from tender to rubbery over a narrow range of heat. Boiling can leave it waterlogged, and the broiler can burn the edges before the center is ready. The air fryer circulates hot air around the shell, which acts as a natural cooking dish, so the meat cooks quickly and stays moist while a little butter browns on top.
Size matters here. Cold-water tails are the most common type in grocery stores and are usually sold frozen in 3 to 8 oz sizes. Buy tails that are roughly the same size so they finish together, and thaw them completely before cooking. Look for tails with firm, white meat and no black spots or strong ammonia smell.
How to make lobster tails in the air fryer
Tap a time to start a timer.
- Butterfly the tails Using kitchen shears, cut down the center of the top shell, from the open end to the base of the tail fan, without cutting through the tail itself. Gently pry the shell open, loosen the meat from the bottom and lift it up and over the shell, resting it on top. Press the shell closed underneath.
- Make the butter Stir together the melted butter, garlic, paprika and salt. Brush about half of it over the exposed meat.
- Preheat Preheat the air fryer to 380 °F for .
- Cook Place the tails meat-side up in the basket. Cook for for 5–6 oz tails, brushing with more butter after . Smaller 3–4 oz tails take , and 8 oz tails take .
- Check and finish The meat should be opaque and white with no translucent spots, and an instant-read thermometer should read 145 °F in the thickest part. Brush with the remaining butter, sprinkle with parsley and serve with lemon wedges.

Tips
- Butterfly for butter. Lifting the meat on top of the shell lets the garlic butter reach every bite and gives you a better presentation.
- Baste once. Brush with butter before cooking and again halfway through so the surface does not dry out.
- Cook two tails at a time. Most baskets fit 2 tails comfortably. For four, cook in two batches and keep the first batch warm under foil.
Stuffed and small tails
For stuffed lobster tails, top the exposed meat with a mixture of 2 tbsp panko, 1 tbsp melted butter and a pinch of garlic powder in the last 3 minutes of cooking, so the crumbs toast without burning. If you only have small tails, check the temperature after 5 minutes.
What to serve with lobster tails
A classic surf and turf means a steak on the side, with a baked potato and asparagus. Asparagus takes 7 minutes in the air fryer, so it finishes at about the same time. For a lighter dinner, serve the lobster with a green salad and corn on the cob.
Storing and reheating
Leftover lobster keeps for 2 days in a sealed container in the refrigerator. Reheat it in the air fryer at 320 °F for 2–3 minutes with a brush of butter, until it reaches 165 °F. Lobster reheats poorly if it is overcooked, so many people chop leftovers into a lobster roll or pasta instead.
Variations
- Cajun butter: Add 1 tsp Cajun seasoning to the butter instead of paprika.
- Lemon pepper: Replace the paprika with 1 tsp lemon pepper and a little zest.
- Mayo glaze: Brush the meat with a thin layer of mayonnaise mixed with garlic and Parmesan for a browned, savory top.
If it does not turn out right
- The lobster is tough and chewy
- It cooked too long. Lobster meat firms up past 145 °F, so use a thermometer and take the tails out right when the meat turns opaque.
- The tail curls up as it cooks
- Slide a small wooden skewer through the length of the tail meat before cooking, or butterfly the meat so it rests on top of the shell.
- The meat is stuck to the shell
- Loosen it with your fingers or a small spoon before cooking, and leave the base of the tail attached so the meat stays in place.
Questions and answers
How long do lobster tails take in the air fryer?
A 5–6 oz tail takes about 8 minutes at 380 °F. A 3–4 oz tail takes 5–6 minutes and an 8 oz tail takes 10–12 minutes. The meat is done at 145 °F and opaque.
Can I cook frozen lobster tails in the air fryer?
Thaw them first in the refrigerator overnight, or in a sealed bag in cold water for 30 minutes. Cooking from frozen leaves the center undercooked while the edges dry out.
Should lobster tails be cooked with the shell on or off?
Shell on. The shell protects the meat and adds flavor. Shell-off tails cook faster, in about 4–5 minutes, and can dry out quickly.
What temperature is best for lobster tails?
380 °F is a good balance. At 400 °F the tails cook faster but the edges can dry out, especially on small tails.
