Breakfast Potatoes in the Air Fryer

Air fryer breakfast potatoes are what diner home fries should be, crisp on the outside, tender inside and loaded with peppers and onion, without standing at a skillet. Diced russet potatoes cook in 20 minutes at 400 °F with a tablespoon of oil, and the peppers and onion go in for the last stretch so they soften without burning. Serve them next to eggs, or tuck them into a breakfast burrito.

Why the air fryer works for breakfast potatoes

Home fries are small diced potatoes cooked until the edges are browned and crunchy. On the stove that means a hot cast-iron skillet, plenty of fat and a lot of stirring, because the dice stick and scorch as soon as you look away. The air fryer does the same job with circulating hot air, so every side of each cube dries and browns at once.

This also frees up your morning. Once the basket is in, there is no skillet to watch, and you can cook eggs or toast bread while the potatoes finish. The peppers and onion join the potatoes partway through, which keeps them tender and sweet instead of dried out.

Tips

  • Stay with ½ inch. Breakfast potatoes need small dice to cook through quickly. Larger cubes turn into roasted potatoes, which need a longer time.
  • Shake often. Small pieces pack tightly. A good shake every 4 minutes keeps them from sticking and gives even color.
  • Season generously. Smoked paprika gives the deep color that people expect from diner-style potatoes, and a pinch more salt at the end wakes them up.

Breakfast potatoes or roasted potatoes?

Both are cubed potatoes, but breakfast potatoes are cut smaller, seasoned with paprika, onion and peppers and meant to be eaten alongside eggs. Larger roasted cubes are a dinner side. For whole potatoes with a soft skin, see baked potatoes, and for thicker cuts see potato wedges.

What to serve with breakfast potatoes

Serve them with scrambled eggs, an omelet, bacon or sausage patties for a full American breakfast plate. Ketchup, hot sauce and a spoonful of salsa all work as toppings.

Storing and reheating

Refrigerate leftover potatoes in a sealed container for up to 4 days. Reheat in the air fryer at 375 °F for 4 to 5 minutes, shaking once. They also keep well for meal prep, and a handful of reheated potatoes makes a quick base for a skillet breakfast or burrito.

Variations

  • With bacon: Add 4 slices of cooked, crumbled bacon in the last 2 minutes (not vegan).
  • Cheesy: Scatter ½ cup shredded cheddar over the potatoes for the final 2 minutes (not vegan or dairy-free).
  • Sweet potato: Replace half the russets with ½-inch diced sweet potato; the cooking time stays the same.

If it does not turn out right

The potatoes are crispy on the outside but raw inside
The dice was too big. Keep pieces to ½ inch and, if needed, lower the heat to 375 °F and add 3 minutes.
The onion and peppers burn
They went in too early. Add them for the last 8 minutes only, or cut them in larger pieces.
The potatoes stick together
Surface starch is the cause. Rinse the diced potatoes well, dry them and shake the basket often.

Questions and answers

How long do breakfast potatoes take in the air fryer?

Diced fresh potatoes take 18 to 20 minutes at 400 °F. Frozen diced breakfast potatoes need 15 to 18 minutes at the same temperature, shaken every 5 minutes.

Do I have to soak or parboil the potatoes?

No. A quick cold rinse and a thorough dry are enough for ½-inch dice. Soaking for 30 minutes gives a slightly crisper result if you have time.

Can I make breakfast potatoes without oil?

You can, but they will be paler and drier. One tablespoon of oil for 1½ lb of potatoes is a small amount, and it is what gets the seasoning to stick and the surface to brown.

How do I reheat breakfast potatoes in the air fryer?

Heat them at 375 °F for 4 to 5 minutes, shaking once. They crisp up again and taste close to freshly made.
