Turkey Meatballs in the Air Fryer
Turkey meatballs are lean, which makes them easy to dry out. Air fryer turkey meatballs cook in about 12 minutes at 375 °F, with a browned crust and a tender center, and need almost no oil. Milk-soaked panko, grated parmesan and fresh garlic keep the meat moist. Serve them in marinara, on zoodles or in a sub.

Why the air fryer works for turkey meatballs
Ground turkey has little fat, so a meatball made from it can go from juicy to dry in a minute or two. The air fryer helps because the cooking time is short and the heat is even. Hot air browns the surface in the first few minutes, and the meatballs finish in about 12 minutes, which leaves little time for moisture to escape.
The recipe also builds in moisture. Panko soaked in milk holds water inside the meatball, parmesan adds fat and salt, and the egg binds the mixture. These details matter more than the temperature setting. If you want the classic beef version, see meatballs in the air fryer, and for a whole roast, turkey breast in the air fryer.

- Soak the panko Stir the panko and milk together in a large bowl and let them sit for , until the crumbs soften into a paste. This keeps lean turkey from drying out.
- Mix and shape Add the turkey, parmesan, egg, garlic, parsley, Italian seasoning, salt, pepper and onion powder. Mix gently with your hands until just combined. Wet your hands and roll into 16 meatballs, about 1½ inches wide.
- Preheat Preheat the air fryer to 375 °F for . Brush the basket with the olive oil and brush a little on top of each meatball.
- Cook Place the meatballs in a single layer with space between them; most baskets hold 8 to 10, so cook in two batches. Cook for , shaking the basket after , until browned all over.
- Check and rest Insert an instant-read thermometer into the center of a large meatball. It must read 165 °F. Rest for , then serve plain or toss in warm marinara.

Tips
- Pick 93% lean. Extra-lean turkey has too little fat to stay tender, even with the milk and panko.
- Keep the mixing light. Overworked meat turns bouncy. Stop as soon as the ingredients look evenly distributed.
- Use a thermometer. Browned turkey can still be undercooked inside. Check the center for 165 °F.
What to serve with turkey meatballs
Serve the meatballs over spaghetti with marinara, in a toasted sub with melted mozzarella or over zucchini noodles for a lighter plate. Zucchini in the air fryer or garlic bread goes well alongside. For game day, put them on toothpicks with a bowl of warm sauce.
Storing and reheating
Refrigerate cooled meatballs in a sealed container for 3 to 4 days, or freeze them for up to 3 months. Reheat them in the air fryer at 350 °F for 4–5 minutes, or 8 minutes from frozen, until they reach 165 °F in the center. For meal prep, freeze them on a tray first so they do not stick together.
Variations
- Spinach and feta: Mix in ½ cup chopped, squeezed-dry spinach and ¼ cup feta instead of the parmesan.
- Sweet and sour: Skip the Italian seasoning, add 1 tsp grated ginger and toss the cooked meatballs in a sweet chili or pineapple glaze.
- Zoodle bowl: Serve the meatballs over zucchini noodles with warm marinara and a sprinkle of parmesan.
If it does not turn out right
- The meatballs are dry and crumbly
- Use 93% lean turkey rather than 99% lean, do not skip the milk-soaked panko, and mix only until combined. Take the meatballs out at 165 °F.
- The meatballs are pale
- Turkey browns less than beef. Brush the tops with a little oil, and do not crowd the basket. Add a teaspoon of tomato paste to the mix for more color.
- The mixture is too sticky to roll
- Wet your hands, or chill the bowl for 15 minutes. A small cookie scoop also makes shaping quicker.
