Reheat Steak in the Air Fryer
Leftover steak turns gray and chewy in the microwave, because it heats unevenly and steams in its own juices. When you reheat steak in the air fryer, hot air warms it from all sides and the outside gets a light sear again. A thin film of butter and a short cook time bring a 1-inch steak back to life in about 6 minutes.

Why the air fryer works for reheating steak
A cooked steak has already lost some of its moisture, and the fat on the surface has gone firm in the refrigerator. Reheating has two jobs: warm the middle and wake up the crust, without cooking the meat any further. The air fryer is good at both. The hot air moves fast enough to bring the surface back to a light sear, while the moderate 350 °F setting gives the center time to warm up.
The microwave works the other way around. It agitates the water inside the meat and heats unevenly, so you get a rubbery edge and a lukewarm middle. A skillet works well, but it needs attention and more fat. In the air fryer you brush on a little butter, set a timer and walk away.
Keep in mind that steak cooked medium-rare will end up closer to medium once it is reheated to a safe temperature. Many cooks warm leftover steak gently to around 130 °F to hold on to the pink center, but the USDA recommends 165 °F for any leftovers, and that is the number this recipe uses.
How to reheat steak in the air fryer
Tap a time to start a timer.
- Take the chill off Take the steaks out of the refrigerator and let them sit on the counter for . Cold meat from the fridge heats unevenly, and the outside overcooks before the middle warms up.
- Brush and season Pat the steaks dry with paper towels. Brush both sides with the melted butter and add a pinch of salt and pepper. The fat protects the surface so it does not dry out.
- Preheat Preheat the air fryer to 350 °F for . A moderate temperature warms the middle without turning the outside into leather.
- Heat Place the steaks in a single layer in the basket with space between them. Heat for , flipping after . Thinner steaks of ½ inch need only .
- Check Insert an instant-read thermometer into the thickest part. The USDA recommends reheating leftovers to 165 °F. If it is not there yet, heat in 1-minute steps and check again.
- Rest and serve Let the steaks rest on a plate for , then slice against the grain. The juices settle back into the meat.

Tips
- Reheat whole, slice after. A whole steak holds its moisture far better than slices. Slice only once it is warm and rested.
- Use fat, not more heat. A teaspoon of butter or oil per steak does more for texture than a higher temperature. Above 375 °F the outside dries out before the middle is warm.
- Cook in one layer. If the steaks touch, the air cannot circulate and they steam. Reheat in batches if your basket is small.
What to serve with reheated steak
Reheated steak is good with the same sides as a fresh one. Try baked potatoes cooked alongside, a side of asparagus or mushrooms in the last few minutes. Sliced thin, it also works on a sandwich with horseradish, arugula and a toasted roll, or on top of a salad for lunch.
Which steak is it?
The method works for most beef cuts, such as sirloin, ribeye, New York strip and filet. Tougher, thin cuts such as skirt steak need less time, around 3 minutes. For how to cook a steak from scratch, see steak in the air fryer, and for small pieces see steak bites, which can be reheated in just 2–3 minutes.
Storing and reheating
Cooked steak keeps for 3 to 4 days in a sealed container in the refrigerator, and about 3 months in the freezer wrapped in plastic wrap and then foil. Thaw frozen steak overnight in the refrigerator. Reheat it only once, and bring it to 165 °F in the center. Do not leave steak out at room temperature for more than 2 hours.
Variations
- Garlic butter: Mix 1 tsp softened butter with a pinch of minced garlic and parsley, and melt it over the hot steak while it rests.
- Cheesesteak style: Slice the warm steak, pile it on a roll with provolone and return to the air fryer for 1 minute to melt the cheese.
- Steak and eggs: Slice the reheated steak over scrambled eggs for a quick breakfast.
If it does not turn out right
- The steak is dry and gray
- It heated too long or too hot. Keep the temperature at 350 °F, brush with butter, and check after 4 minutes. Thin steaks and slices need only a few minutes.
- The middle is still cold
- The steak went in straight from the refrigerator or was very thick. Let it sit out for 15 minutes first, and heat thick steaks 2–3 minutes longer, covered in a loose foil packet.
- The steak smells like leftovers
- Reheated beef can pick up a stale flavor. Finish with a pat of fresh butter, a squeeze of lemon or a spoonful of the original pan juices.
Questions and answers
How long do you reheat steak in the air fryer?
About 6 minutes at 350 °F for a 1-inch steak, flipped halfway. Thin steaks take 3–4 minutes, and 1½-inch steaks take 8–10 minutes. Sliced steak needs only 2–3 minutes.
How do you reheat steak in the air fryer without drying it out?
Let it warm up on the counter for 15 minutes, brush it with butter, use 350 °F rather than a higher temperature, and check it early. Wrapping the steak in a tight foil packet also holds in moisture, though it will not brown.
Is it better to reheat steak in the air fryer or the oven?
The air fryer is faster and gives a better crust, because the hot air moves around the meat. A low oven at 250 °F is gentler for very thick cuts, but takes 15–20 minutes. Either way, the microwave is the worst choice for texture.
Can I reheat a frozen steak in the air fryer?
Thaw it in the refrigerator overnight first for the best result. In a pinch, heat a frozen cooked steak at 350 °F for 10–12 minutes in a foil packet, then open the foil for the last 2 minutes. Check for 165 °F in the center.
