Why the air fryer works for salmon bites

Small pieces of salmon have a lot of surface compared to their size, which is perfect for the air fryer. The hot air browns every side at once, so the edges caramelize and the center stays tender. In a skillet you need to turn each cube separately and the glaze often burns in the pan.

How to make salmon bites in the air fryer

  1. Cut the salmon Remove any skin and pin bones. Cut the fillet into 1-inch cubes. Pieces of the same size cook at the same speed, so cut carefully.
  2. Marinate briefly Whisk the soy sauce, honey, avocado oil, garlic, ginger and sesame oil in a bowl. Add the salmon, stir gently and refrigerate it for , no longer, or the soy sauce will firm the fish.

Tips

  • Use a sharp knife. Chill the fillet for 10 minutes before cutting; firm fish cuts into clean cubes instead of tearing.
  • Keep the marinade short. Soy sauce and salt firm the surface after 20–30 minutes, which makes the bites rubbery. Fifteen minutes is enough.
  • Do not crowd. A single layer lets the air reach every side. Cook in two batches in a small 3–4 qt machine.

What to serve with salmon bites

Serve the bites over rice with cucumber, avocado and shredded carrots for a bowl, or in warm tortillas with slaw for tacos. They also work on a green salad, or next to steamed broccoli. A drizzle of sriracha mayo or bang bang sauce is a common finish.

Storing and reheating

Cooled bites keep for 2 days in a sealed container in the refrigerator. Reheat them in the air fryer at 300 °F for 2–3 minutes until they reach 165 °F, or eat them cold in a bowl or salad.

Variations

  • Teriyaki: Replace the honey, garlic and ginger with 3 tbsp teriyaki sauce and cook the same way (not gluten-free).
  • Blackened: Skip the marinade and toss the cubes in 1 tbsp oil and 2 tsp blackening seasoning instead.
  • Brown sugar: Swap the honey for 1 tbsp brown sugar for a darker glaze, and watch the last minute.

If it does not turn out right

The bites stick to the basket
Brush the basket lightly with oil before preheating, and give the cubes a gentle shake after 4 minutes. Do not flip them until the surface has set.
The glaze is burning
Honey burns quickly at high heat. Lift the cubes out of the marinade so only a thin film remains, and lower the heat to 375 °F if your air fryer runs hot.
The salmon is dry
The cubes were too small or cooked too long. Cut them at least 1 inch and check at 6 minutes. Salmon is ready as soon as it flakes.
