Pierogies in the Air Fryer

Air fryer pierogies come out with a crisp, blistered skin and a hot, soft filling, with no pan of butter to babysit and no boiling step. Frozen pierogies go straight from the freezer into the basket and are done in about 12 minutes. You can also cook thawed, fresh or boiled pierogies with only small changes in time.

Why the air fryer works for pierogies

A pierogi is a pocket of tender dough around a filling of mashed potato and cheese, sauerkraut, mushroom or meat. The traditional route is to boil them and then pan-fry them in butter, which gives a crisp skin but takes two pots and a lot of watching. The air fryer shortens that to one step. The dry heat browns the dough while the filling warms through, and the pierogies need only a thin coating of fat.

Because frozen pierogies are already shaped and sealed, they hold together better when they go in frozen. The cold dough stays firm while the surface crisps. The main thing to watch is crowding: when pierogies touch, the dough steams and the seams stick, so keep them in one layer with a little space between them.

How to make pierogies in the air fryer

Tap a time to start a timer.

  1. Coat lightly Place the frozen pierogies in a bowl and toss with the oil or melted butter until each one has a thin coating. Do not thaw them first. Thawed pierogies stick together and tear.
  2. Preheat Preheat the air fryer to 380 °F for . A hot basket sets the dough fast so the pierogies do not stick.
  3. Load in a single layer Place about 8 pierogies in the basket in one layer with a little space between them. A crowded basket steams the dough instead of crisping it, so cook in 2 batches.
  4. Cook and flip Cook for , flipping each pierogi after . They are done when both sides are golden with a few darker blisters and the dough feels firm.
  5. Check the center The filling should be steaming hot, at least 165 °F in the center if you have a thermometer. If a pierogi is pale or the center is lukewarm, add .
  6. Season and serve Sprinkle with salt while hot and serve right away with sour cream and chives, or with sautéed onions.

Tips

  • Leave them frozen. Frozen dough is firm enough to handle and flip, and it tears less than thawed dough.
  • Add fat for color. A tablespoon of oil or melted butter helps the dough turn golden and keeps the edges from drying out.
  • Do not skip the flip. The side facing down in the basket browns less, so turning each pierogi once gives an even color.

What to serve with pierogies

Classic pierogies come with sour cream, crispy fried onions and a sprinkle of chives. For a heartier dinner, serve them with sausage or kielbasa cooked in the air fryer, or with roasted onions for a sweet contrast. A side of sauerkraut or a crisp green salad cuts the richness. Brats also go well on the same plate for a game day spread.

Storing and reheating

Keep leftover pierogies in a sealed container in the refrigerator for up to 3 days. Reheat them in the air fryer at 350 °F for 4–5 minutes, flipping once, until they are hot and crisp again. Leftovers with a meat filling should reach 165 °F in the center. You can also freeze cooked pierogies on a tray, then move them to a bag and reheat from frozen for 7–8 minutes at 350 °F.

Variations

  • Bacon and onion: Toss the cooked pierogies with crumbled bacon and caramelized onions, then top with sour cream (not vegetarian).
  • Garlic butter: Mix 2 tbsp melted butter with 1 minced clove of garlic and brush it on the pierogies during the last 2 minutes.
  • Pierogi and kielbasa: Slice a fully cooked kielbasa into ½-inch rounds and add them to the basket for the last 5 minutes. Heat the kielbasa to 165 °F (not vegetarian).
  • Breaded crunch: Dip thawed pierogies in beaten egg, coat with seasoned panko and cook at 380 °F for 8 minutes for a crunchier outside.

If it does not turn out right

The pierogies are dry and hard
They cooked too long or had no oil. Toss in a spoonful of oil or butter and check at 8 minutes. Smaller or thawed pierogies cook faster.
The pierogies stuck to the basket
Preheat the basket, oil the pierogies and avoid touching them for the first 4 minutes. Flip with tongs and a gentle twist.
The filling burst out
Cooking from frozen at too high a temperature can split the seams. Stay at 380 °F and do not overfill the basket.

Questions and answers

How long do frozen pierogies take in the air fryer?

About 10–12 minutes at 380 °F, flipping halfway. Mini pierogies need 8–9 minutes. Check that the filling is hot in the center before serving.

Can I cook pierogies in the air fryer without thawing?

Yes, frozen is the better choice. Thawed pierogies get sticky and tear, so cook them for only 7–8 minutes and handle gently.

How do I cook fresh or boiled pierogies in the air fryer?

Brush fresh or already boiled pierogies with oil and cook at 380 °F for 6–8 minutes, flipping once. They only need to brown, since the dough is already cooked or very thin.

Do I need to boil pierogies first?

No. The air fryer cooks frozen pierogies through, so boiling is optional. Boiling first gives a softer, chewier skin, and the air fryer then only crisps the outside.
