Why the air fryer works for mahi mahi

Mahi mahi, also sold as dolphinfish and not related to dolphins, has firm, lean flesh with large flakes. It holds together well, so it is one of the easiest fish to cook in the basket. The fillets are usually cut thicker than tilapia or flounder, which gives you a wider window between done and dry, and the circulating hot air gives the surface a light crust.

Because the meat is lean, the seasoning does most of the work. A dry rub with paprika and garlic gives color and flavor without any breading. If you want something stronger, blackened seasoning and a squeeze of lime are the classic pairing.

Tips

  • Pick fillets of one thickness. Fillets about 1 inch thick cook together. Cut very thick pieces in half through the middle.
  • Thaw frozen fish if you can. Overnight in the refrigerator gives the best texture. Frozen fillets work, but they release more water.
  • Do not skip the thermometer. The difference between 145 °F and 160 °F is about 2 minutes, and it is also the difference between moist and dry.

Blackened, tacos and breaded mahi mahi

For blackened mahi mahi in the air fryer, replace the rub with 1 tbsp blackening seasoning and cook for the same 10 minutes. For tacos, flake the cooked fish into warm corn tortillas with slaw, avocado and mango salsa. For breaded mahi mahi, dip the fillets in flour, beaten egg and panko, spray with oil and cook at 400 °F for 10–12 minutes, flipping once. Cut into 1-inch pieces, the fish makes bites that cook in 5–6 minutes. For a richer, oilier fish, try salmon, which has a shorter cook time.

What to serve with mahi mahi

Mahi mahi suits tropical flavors, such as pineapple or mango salsa, black beans and rice. For a vegetable side, try asparagus or zucchini, which cook at about the same temperature. For a simple dinner, serve the fish with sweet potato fries.

Storing and reheating

Cooked mahi mahi keeps for 2 to 3 days in a sealed container in the refrigerator. Reheat it in the air fryer at 320 °F for 3–4 minutes until it reaches 165 °F in the center. It also works cold, flaked over a salad.

Variations

  • Lemon pepper: Replace the paprika with 1 tsp lemon pepper and a little grated lemon zest.
  • Cajun: Use 1½ tsp Cajun seasoning instead of the paprika and onion powder.
  • Mango salsa: Mix ½ cup diced mango, 2 tbsp diced red onion, 1 tbsp chopped cilantro and the juice of ½ lime, then spoon it over the cooked fish.

If it does not turn out right

The mahi mahi is dry
It cooked too long. Check from 8 minutes and take it out at 145 °F. Thinner fillets and frozen fillets that have thawed unevenly can dry out first.
The fish tastes strong or fishy
Fresh mahi mahi should smell clean and mild. Dark red lines are normal, but a strong smell means the fish is old. A squeeze of lime at the end brightens it.
The seasoning burns
Sugar and a lot of spice can scorch at 400 °F. Keep the oil on the fish and, for sweet marinades, cook at 375 °F.
