Cornish Hens in the Air Fryer

Air fryer Cornish hens give you a whole roasted bird with golden skin in about 35 minutes, instead of the hour or more an oven needs. Each hen is a single serving, which makes them a good choice for a small holiday dinner or a date night at home. This guide covers whole hens, halved hens for smaller baskets, and the right internal temperature.

Why the air fryer works for Cornish hens

A Cornish hen is a small young chicken, usually 1 to 2 pounds, which makes it a good match for the air fryer. The bird is small enough to fit in the basket, and hot air moving around it crisps the skin all over while the meat stays juicy. A whole roast chicken needs over an hour in the oven. A hen takes about half an hour.

The shape matters too. Cornish hens have a high ratio of skin to meat, and that skin gets very crisp with only a thin layer of oil. Starting breast side down lets the dense breast cook gently while the thighs get the strongest heat, and flipping at the end gives the top a final golden finish. If you want to cook a bigger bird, see whole chicken in the air fryer.

How to make Cornish hens in the air fryer

Tap a time to start a timer.

  1. Prep the hens Remove any giblets from the cavity and pat the hens completely dry inside and out with paper towels. Do not rinse them. Tuck the wing tips behind the back and tie the legs together with kitchen twine if you have it.
  2. Season Mix the salt, paprika, garlic powder, thyme and pepper. Rub the oil over the hens, then season the outside and the cavity. Put half a lemon and a smashed garlic clove inside each hen.
  3. Preheat Preheat the air fryer to 375 °F for .
  4. Cook breast side down Place the hens breast side down in the basket. Cook for . Most 6 qt baskets fit 1 hen at a time, and 7 qt or larger fit 2; if you only have room for one, cook the hens in two rounds and keep the first warm.
  5. Flip and finish Turn the hens breast side up and cook for 20 more minutes, until the skin is deep golden.
  6. Check and rest Insert an instant-read thermometer into the thickest part of the breast and the thigh without touching the bone. Both must read at least 165 °F; the thigh is better at 175 °F. Rest the hens for before carving.

Tips

  • Thaw completely. Most hens are sold frozen. Thaw them in the refrigerator for a full day so the center is not icy.
  • Dry the skin. Pat dry, and leave the hens uncovered in the fridge for an hour if you can. It makes the skin crispier.
  • Check both breast and thigh. The thigh finishes later, so measure there as well as in the breast.

Whole, halved or spatchcocked

Whole hens look the best for serving, but a smaller basket may not fit them. Halving a hen through the breastbone cuts the time by about a third, and spatchcocking (removing the backbone and flattening the bird) gives the most even cooking and the crispest skin. Use kitchen shears and cut along both sides of the backbone. The same method works for the turkey legs and other poultry you cook in the air fryer.

What to serve with Cornish hens

Cornish hens suit a small holiday table or a Sunday dinner. Serve them with baked potatoes or mashed potatoes, green beans and Brussels sprouts. For more holiday ideas, see our guide to Thanksgiving in the air fryer. A pan sauce made from the juices in the drip tray goes well too.

Storing and reheating

Refrigerate leftover hen within 2 hours, in a sealed container for up to 3 days. Reheat halves in the air fryer at 350 °F for 8–10 minutes, until they reach 165 °F in the thickest part. Pull the meat off the bone for soups, salads and sandwiches.

Variations

  • Herb butter: Rub 2 tbsp softened butter mixed with parsley and thyme under the skin (not dairy-free).
  • Citrus and rosemary: Replace the thyme with fresh rosemary and add orange zest.
  • Honey glaze: Brush the hens with 1 tbsp honey mixed with 1 tsp Dijon mustard during the last 5 minutes.

If it does not turn out right

The skin is pale in some spots
Dry the hens thoroughly and rub oil all over, including under the legs. Leave some space around each hen so the air can reach every side.
The breast is done but the thigh is not
Cover the breast with a small piece of foil pressed down onto the skin, so it cannot lift in the fan, and cook the hen 5 minutes more, or cut the hen in half next time for even cooking.
The hen does not fit in the basket
Spatchcock it by cutting out the backbone with kitchen shears and pressing the hen flat, or cut it in half through the breastbone. Halves cook faster.

Questions and answers

How long do Cornish hens take in the air fryer?

About 35 minutes at 375 °F for 1¼–1½ lb hens, with the first 15 minutes breast side down. Halved hens need 22–25 minutes. The internal temperature is the best guide.

What temperature should Cornish hens reach?

The USDA minimum for poultry is 165 °F, measured in the thickest part of the breast and the thigh. Thighs taste better at about 175 °F.

Can I cook a Cornish hen from frozen?

It is not recommended, because the outside overcooks before the inside thaws. Thaw the hens in the refrigerator for 24 hours, or in cold water for about an hour per pound, and pat them dry.

Can I stuff Cornish hens in the air fryer?

Not safely. Stuffing slows heat inside the cavity and must also reach 165 °F. Bake stuffing separately, or fill the cavity only with lemon, garlic and herbs.

How many Cornish hens fit in an air fryer?

One hen fits most 5–6 qt baskets; two need a 7 qt or larger basket or an oven-style air fryer. Smaller baskets can fit hen halves.
