Halibut in the Air Fryer

Halibut is a lean, firm and mild fish, and it is also expensive, so overcooking it hurts. Air fryer halibut cooks quickly with dry heat, giving fillets with a golden surface and moist, flaky meat in about 10 minutes. This recipe uses lemon butter and covers fillets, steaks, frozen halibut and a breaded version.

Why the air fryer works for halibut

Halibut is a lean flatfish with firm, white flesh and very little fat. That firmness is an advantage, because the fillets hold their shape in the basket, and you can flip them without the flaking that thin fish like sole suffer from. The hot air sets the surface and cooks the center quickly, which keeps the moisture in the meat.

The downside of lean fish is the margin for error. A minute or two too long, and halibut turns from tender to dry and chalky. That is why a thermometer is recommended for this recipe: 145 °F is the USDA target, and it is also the point where halibut stays moist and flakes cleanly.

Tips

  • Buy thick, even pieces. Fillets about 1 inch thick cook evenly. Halibut steaks, which are cross-cut with a bone, need a little longer.
  • Skip the long marinade. Acid such as lemon juice turns the surface of fish mushy if it sits for too long. Add it at the end.
  • Cook in batches. A 5 qt basket fits 2 or 3 fillets. Crowding blocks the airflow.

Breaded halibut, tacos and bites

For breaded halibut, dip the fillets in flour, beaten egg and panko seasoned with salt and paprika, spray with oil and cook at 400 °F for 10–12 minutes, flipping once (not gluten-free). For air fryer halibut tacos, season with chili powder and cumin, cook as above, and flake the fish into warm tortillas with cabbage and lime. Cut into 1-inch pieces, halibut bites take 5–6 minutes. Similar fish with a milder taste, like cod, can be cooked the same way.

What to serve with halibut

Halibut goes well with lemony rice, roasted vegetables and a simple salad. Try asparagus, broccoli or baked potatoes alongside. A spoonful of tartar sauce or a squeeze of lemon is all it needs.

Storing and reheating

Leftover halibut keeps for 2 days in a sealed container in the refrigerator. Reheat it in the air fryer at 320 °F for 3–4 minutes until it reaches 165 °F in the center. Flake cold leftovers into a salad or fish tacos instead if you prefer.

Variations

  • Parmesan crust: Mix 3 tbsp grated Parmesan with 2 tbsp panko and press it onto the fillets for the last 4 minutes (not gluten-free).
  • Cajun: Replace the garlic powder with 1 tsp Cajun seasoning.
  • Herb butter: Add 1 tsp chopped fresh dill or chives to the lemon butter.

If it does not turn out right

The halibut is dry
Halibut is lean and has a narrow window. Check at 8 minutes and take it out at 145 °F. The temperature rises a degree or two as it stands.
The fish sticks to the basket
Brush the fish and the basket lightly with oil and wait until the fillet releases before turning it. Use a wide fish spatula.
The fillets are thick on one end and thin on the other
Fold the thin tail under, or cut the fillet into evenly thick pieces, so they cook at the same pace.
