Artichoke Hearts in the Air Fryer

Canned artichoke hearts are tender and tangy but soft, and the air fryer is the easiest way to give them a crunchy crust without a pot of hot oil. These air fryer artichoke hearts get a coating of panko and Parmesan, turn golden in about 8 minutes and are ready for dipping. You also get timings for jarred, frozen and unbreaded artichokes.

Why the air fryer works for artichoke hearts

Artichoke hearts are packed in brine or water, so their surface is wet and their texture is soft. Deep frying drives that moisture out in a hurry, but it takes a lot of oil. In the air fryer, fast-moving hot air dries the outside of each quarter while the breading sets, so you get a crisp crust and a tender, slightly tangy center with only a light mist of oil.

The panko does most of the work. Its large, jagged flakes brown quickly and stay crunchy, and the Parmesan adds salt and flavor to the crust. If you are making air fryer artichoke hearts for a party, you can bread them up to an hour ahead and keep them on a plate in the refrigerator, then cook them right before serving.

Tap a time to start a timer.

  1. Drain and dry Drain the artichoke hearts, then press them between several layers of paper towels. Squeeze gently and let them sit on fresh towels for . Dry artichokes hold the breading; wet ones make it slide off.

  3. Bread the artichokes Toss the pieces in the flour, dip them in the egg, then press them firmly into the panko mixture so the crumbs stick on all sides. Place the breaded pieces on a plate.

Tips

  • Dry them twice. Blot the artichokes after draining and again after they sit for a few minutes. This is the single biggest factor in whether the breading stays on.
  • Do not overcrowd. About 8 to 10 pieces fit in one layer in a 5 qt basket. Crowding steams the crust instead of crisping it, so work in two batches.
  • Press the crumbs on. Use your fingers to firmly press the panko mixture onto each piece. Loose crumbs blow around in the basket and fall off.

Canned, jarred or frozen

Canned artichoke hearts in water are the best choice for this recipe, because they are neutral and hold a coating well. Marinated hearts from a jar already taste of oil, garlic and herbs. They are good for the unbreaded version, but blot them well so they crisp instead of steaming. Plain frozen artichoke hearts are a good option when you want a crunchier, roasted flavor. Cook them from frozen without breading, or thaw and dry them completely before you bread them. Fresh artichokes are a different job, since they need to be trimmed and parboiled first.

What to serve with artichoke hearts

Crispy artichoke hearts are an easy appetizer for game day, served with ranch, lemon aioli or marinara. They also work as a side next to chicken breast or salmon, or chopped over a green salad for extra crunch. For more side dishes, see the vegetables category.

Storing and reheating

Breaded artichokes lose their crunch quickly, so cook only what you will eat. Store leftovers in a sealed container in the refrigerator for up to 3 days. Reheat them in a single layer in the air fryer at 350 °F for 3–4 minutes until hot and crisp again. Do not microwave them, which turns the crust soft.

Variations

  • Lemon-pepper: Replace the paprika with 1 tsp lemon zest and add extra black pepper to the panko.
  • Spicy: Add ¼ tsp cayenne pepper to the panko and serve with a chipotle ranch dip.
  • Salad topper: Cook the unbreaded version for 10 minutes, then toss the crisp pieces with arugula, olive oil and shaved Parmesan.

If it does not turn out right

The breading falls off
The artichokes were too wet. Blot them well, press the crumbs on firmly and do not move the pieces during the first 4 minutes, when the coating is still setting.
The crust is pale
Mist the tops with oil until the crumbs look damp. Dry panko needs a little fat to brown, and a crowded basket blocks the airflow, so keep the pieces in one layer.
The artichokes taste bland
Canned artichokes are mild. Season the panko well, add the Parmesan and finish with lemon juice and a pinch of flaky salt.

Questions and answers

How long do you air fry artichoke hearts?

Breaded canned artichoke hearts take 8 minutes at 380 °F, shaken halfway. Unbreaded, patted-dry pieces need 8–10 minutes at the same temperature.

Can you air fry frozen artichoke hearts?

Yes. Cook plain frozen artichoke hearts straight from the freezer at 380 °F for 10–12 minutes, shaking twice. For a crust, thaw and dry them first, then bread as in the recipe.

Can I use canned or jarred artichoke hearts?

Both work. Canned hearts packed in water are the best base for breading. Marinated jarred hearts are already seasoned and oily, so skip the extra oil spray and blot them well.

Can I make air fryer artichoke hearts without breading?

Yes. Toss dried quarters with 1 tbsp olive oil and a pinch of salt, and cook at 380 °F for 8–10 minutes. The edges crisp and the centers stay soft.
