Why the air fryer works for turkey legs

A turkey leg is made of dark meat, skin and a lot of connective tissue. That tissue is tough at 165 °F and turns tender only when it reaches about 175 °F, which means the cut needs more time than white meat. In an oven that long, the skin often turns leathery. The air fryer keeps hot, dry air moving around the leg, so the fat under the skin renders and the surface crisps as the inside cooks through.

Turning the legs every 10 minutes matters more than it does for flat cuts. A leg is round and uneven, and one side would otherwise sit in the hot basket the whole time. How to make turkey legs in the air fryer

Tips

  • Dry the skin. Let the seasoned legs sit uncovered in the refrigerator for an hour, or even overnight, for the crispest result.
  • Use the right thermometer spot. Aim for the thickest part of the drumstick, next to the bone but not touching it, since bone reads hotter than the meat.
  • Do not skip the rest. Five minutes keeps the juices in the meat and lets the skin set.

What to serve with turkey legs

Turkey legs feel like fair food, so pair them with corn on the cob, coleslaw and baked beans, or serve them at Thanksgiving next to mashed potatoes and gravy. Corn on the cob can go into the basket after the legs come out and rest, and takes only 10 minutes.

Storing and reheating

  • BBQ turkey legs: Brush with 2 tbsp barbecue sauce for the last 5 minutes only, since the sugar in the sauce burns on a long cook.
  • Garlic-herb: Swap the paprika for 1 tsp dried rosemary and 1 tsp dried thyme.
  • Spicy: Add ½ tsp cayenne pepper to the rub.

If it does not turn out right

The skin is tough instead of crisp
The skin was damp or the basket was crowded. Pat the legs very dry, leave space around each one and turn them regularly. Brushing on a little baking powder with the salt also helps the skin crisp.
The meat near the bone is still pink or tough
Large legs need the full 40 minutes or more. Cook until the thermometer reads 175 °F next to, but not touching, the bone. Pink color near the bone can remain in fully cooked poultry.
The legs smoke in the air fryer
Turkey skin renders a lot of fat. Pour off any fat that has collected in the drawer halfway through, and keep the drawer clean between batches.
