Air fryer potatoes give you what a 45-minute oven roast does, a crisp golden crust and a fluffy middle, in about 20 minutes and with a single tablespoon or two of oil. The method below uses cubed potatoes, the most popular way to roast potatoes in the air fryer, with exact time and temp for every cut size from diced to wedges. Why the air fryer works for potatoes

A potato is mostly starch and water. For a crisp crust the surface water has to evaporate fast, and then the starch on the outside can dry into a thin, brittle shell. An air fryer is a small, powerful convection oven. Hot air moves around every cube, so the surface dries in minutes, while the inside steams gently in its own moisture and turns fluffy.

That is why potatoes in the air fryer need so little oil. The oil does not fry the potatoes. It carries heat to the surface, helps the seasoning stick and speeds up browning. Starchy russets give the fluffiest centers, and Yukon Gold potatoes give a creamier center with a buttery color. Both work with this recipe, and the cooking time is the same.

How to make potatoes in the air fryer

  1. Cut and soak Scrub the potatoes (peeling is optional) and cut them into ¾-inch cubes. Cover with cold water and soak for . This rinses off surface starch, which is what makes cubes stick together and stay pale.
  2. Dry completely Drain the potatoes and spread them on a clean kitchen towel or several layers of paper towels. Pat them until no moisture is left. Wet potatoes steam instead of crisping.
  3. Season Toss the dry cubes in a bowl with the olive oil, salt, garlic powder, paprika and pepper until every piece has a thin, even coat.
  4. Preheat and load Preheat the air fryer to 400 °F for . Add the potatoes in a single, loose layer. A 5-qt basket holds about 1½ lb; if yours is smaller, cook in two batches.

Tips

  • Cut evenly. Pieces of different sizes finish at different times. Aim for cubes of the same size, and keep the small ends from burning by cutting them slightly larger.
  • Do not skip the shake. Shaking every 5 to 7 minutes moves the cubes from the hot spots and exposes fresh sides. For extra browning, give the basket a firm toss rather than a gentle one.
  • Salt at the right time. Salt draws water out of raw potatoes. Add it with the oil right before cooking, not during the soak, so the surface stays dry.

Which potato to use

Russet potatoes (also called Idaho) are the classic for roasting because their high starch content gives a crunchy shell and a floury center. Yukon Gold potatoes sit in the middle and brown evenly. Red potatoes hold their shape best and have thin skins, but they are waxy, so the crust is a little less crunchy. What to serve with air fryer potatoes

Roasted potatoes are a natural side for a weeknight dinner of pork chops, chicken thighs or steak. Add a green side such as green beans or broccoli, and put a small bowl of ketchup, ranch or garlic aioli on the table for dipping. For breakfast, they pair with scrambled eggs. Storing and reheating

Let the potatoes cool, then keep them in a sealed container in the refrigerator for up to 4 days. Reheat in the air fryer at 375 °F for 4 to 5 minutes, shaking once, until hot throughout and crisp again. The microwave makes roasted potatoes soft, so the air fryer is a better choice. Cooked potatoes should not stand at room temperature for more than 2 hours.

Variations

  • Potatoes and onions: Add 1 sliced onion to the basket for the last 8 minutes of cooking, so it softens and caramelizes without burning.
  • Parmesan and herbs: Toss the hot potatoes with 2 tbsp grated Parmesan and 1 tsp dried rosemary right after cooking (not dairy-free).

If it does not turn out right

The potatoes are soggy instead of crispy
There was too much moisture or too many potatoes in the basket. Soak, then dry them thoroughly, keep the layer loose and cook in two batches if the basket looks crowded.
The outside is brown but the center is hard
The cubes were too large or the heat too high. Cut them to ¾ inch or smaller, or drop the temperature to 375 °F and add 3 to 5 minutes.
The seasoning falls off or burns
Toss the potatoes in the oil first so the spices stick, and keep the oil to 1½ tablespoons. Fine garlic powder can scorch above 400 °F, so do not raise the heat.
