Pork Steaks in the Air Fryer

Pork steaks are cut from the shoulder, so they carry more fat and flavor than loin chops and stay tender when they are cooked well. Air fryer pork steaks brown at the edges and stay juicy in about 14 minutes at 400 °F, with a simple smoky rub and no breading. Below you will find times for bone-in, boneless and frozen steaks.

Why the air fryer works for pork steaks

A pork steak is a slice of the shoulder, usually the blade end, cut across the bone. It has good marbling and some connective tissue, which is why it is often cooked low and slow on a smoker. In the air fryer, you can skip the hours. The fat renders in the fast airflow, the rub caramelizes on the surface and the steak finishes in about 14 minutes.

Because shoulder meat is richer than loin, it forgives a few extra degrees far better than a lean chop does. That makes air fryer pork steaks a relaxed weeknight choice, as long as you start with steaks of even thickness and check the center with a thermometer.

How to make pork steaks in the air fryer

Tap a time to start a timer.

  1. Dry the steaks Pat the pork steaks dry with paper towels. If they have a thick strip of connective tissue or gristle at the edge, make a few small cuts through it so the steak stays flat.
  2. Season Rub the steaks with the oil. Mix the salt, pepper, paprika, garlic powder, onion powder and brown sugar and press the mix onto both sides. Let the steaks sit for while the air fryer heats.
  3. Preheat Preheat the air fryer to 400 °F for .
  4. Cook Place the steaks in a single layer, without overlapping. Cook for , flipping after . For steaks about ¾ inch thick, start checking at .
  5. Check the temperature Insert an instant-read thermometer into the thickest part, not touching bone. The USDA minimum is 145 °F, and shoulder steaks are tender and juicy there or a bit above it, up to about 160 °F.
  6. Rest Let the steaks rest on a plate for before serving. The USDA recommends at least .

Tips

  • Pick even steaks. Choose steaks of similar thickness so they finish together, ideally ¾ to 1 inch.
  • Season both sides. The rub is the main flavor, so press it in rather than just sprinkling it.
  • Cook in batches. A 4 to 6 qt basket holds two steaks flat. For four steaks, cook two at a time and keep the first pair warm.

Pork steaks vs. chops, loin and tenderloin

Pork steaks, shoulder-cut and fatty, are not the same as the leaner cuts. Pork chops are cut from the loin and dry out quickly, so see pork chops in the air fryer for those, with different timing. A whole pork loin or pork tenderloin are roasts and cook longer. If you want pork that shreds, try pulled pork.

What to serve with pork steaks

Pork steaks go well with barbecue-style sides such as coleslaw, baked beans and cornbread. From the air fryer, potato wedges and corn on the cob work well, or serve the steaks with mashed potatoes and green beans.

Storing and reheating

Cooled pork steaks keep for 3 to 4 days in a sealed container in the refrigerator. Reheat them in the air fryer at 350 °F for 4 to 5 minutes, flipping once, until they reach 165 °F in the center. You can also slice cold leftovers for sandwiches with mustard and pickles.

Variations

  • BBQ glaze: Brush the steaks with 2 tbsp BBQ sauce in the last 3 minutes. Sugary sauces burn if added earlier.
  • Lemon herb: Replace the paprika and brown sugar with 1 tsp dried thyme and the zest of half a lemon.
  • Breaded: For a crisp coating, dip thin steaks in beaten egg and then seasoned breadcrumbs, spray with oil and cook at 380 °F for 10 to 12 minutes (not gluten-free).

If it does not turn out right

The pork steaks are chewy
Shoulder meat has connective tissue. Cut the steaks about ¾ to 1 inch thick, do not overcook them, and slice against the grain. For very thick steaks, lower the heat to 375 °F and add 3 to 4 minutes.
The sugar in the rub burns
Brown sugar scorches in dry heat. Use only 1 tsp for two steaks, and lower the heat to 375 °F if the edges darken before the center is done.
The steaks are pale
They were wet or the basket was crowded. Pat them dry, cook one layer at a time and always preheat.

Questions and answers

How long do pork steaks take in the air fryer?

At 400 °F, ¾ inch steaks take about 10 to 12 minutes and 1 inch steaks take 14 to 16 minutes, flipped halfway. Boneless steaks cook about 2 minutes faster.

What temperature should pork steaks reach?

The USDA recommends 145 °F followed by a 3-minute rest. Because they are cut from the shoulder, pork steaks stay tender even at 155–160 °F.

Can you cook pork steaks from frozen in the air fryer?

Yes. Cook frozen steaks at 380 °F for 18 to 22 minutes, flipping twice, and add the rub after the first 5 minutes, when the surface has thawed. Check the temperature before serving.

What is the difference between pork steaks and pork chops?

Pork steaks come from the shoulder and are fattier and chewier, while chops are cut from the loin and are leaner. Steaks suit bold rubs and sauces, and they are more forgiving.
