Why the air fryer works for cornbread
Cornbread is a quick bread, and its charm is the contrast between a crisp, golden crust and a tender, slightly sweet crumb. A conventional oven gets there by heating a large, empty space for 15 minutes before the pan goes in. An air fryer heats a small chamber in a couple of minutes and circulates the air constantly, so the crust browns on the top and edges while the inside bakes gently.
The same fast air that browns the crust also dries the batter, so cornbread bakes best at a lower setting than people expect. At 320 °F the batter rises steadily and sets from the outside in, which keeps the top from darkening before the center is done. A small 6-inch pan is the right size for most 4–6 qt baskets; larger pans block airflow and bake unevenly.

- Prepare the pan Butter a 6-inch round cake pan or a 6-inch cast iron skillet that fits in your basket with about ½ inch of space around it. Cut a round of parchment to fit the bottom if you like. The pan must be loaded with batter before it goes into the air fryer.
- Mix the dry ingredients Whisk the cornmeal, flour, sugar, baking powder, baking soda and salt in a medium bowl.
- Mix the wet ingredients In a second bowl, whisk the buttermilk, egg and melted butter. Pour into the dry ingredients and stir only until no dry streaks remain. A few lumps are fine. Let the batter rest for so the cornmeal softens.
- Fill and preheat Preheat the air fryer to 320 °F for . Scrape the batter into the pan and smooth the top.
- Bake Lower the pan into the basket using a sling of foil or oven mitts. Bake for , until the top is golden and a toothpick in the center comes out clean. If the top browns too fast after , cover it loosely with a small piece of foil crimped to the pan.
- Cool and slice Let the cornbread rest in the pan for , then run a knife around the edge, turn it out and cut into wedges. Brush with a little melted butter or honey while warm.

Tips
- Use a snug pan. A 6-inch round pan fills most of the basket. Leave about ½ inch of space on each side so the air can flow around it.
- Rest the batter. Five minutes lets the cornmeal absorb liquid, which gives a softer crumb and less grit.
- Do not overmix. Stir until the flour disappears. Overmixing develops gluten and gives a tough, dry texture.
What to serve with cornbread
Cornbread is the natural partner for a bowl of chili, baked beans or collard greens. It also goes well with pulled pork and with a slice of meatloaf for a weeknight dinner. Serve it warm with butter and a drizzle of honey, or crumble leftovers into a bowl of soup. For Thanksgiving, bake a pan the day before and use it for stuffing.
Storing and reheating
Wrap the cooled cornbread in plastic wrap or keep it in a sealed container for up to 2 days at room temperature, or 4–5 days in the refrigerator. For longer storage, freeze slices for up to 2 months. Reheat a refrigerated slice in the air fryer at 300 °F for 2–3 minutes and a frozen slice for 5–6 minutes, until warm throughout.
Variations
- Jalapeño cheddar: Fold in ½ cup shredded sharp cheddar and 1 diced and seeded jalapeño before baking.
- Honey cornbread: Replace the sugar with 2 tbsp honey and brush the warm top with more honey.
- Cornbread croutons and dressing: Cube a day-old pan, toss with a little oil and air fry at 350 °F for 5–6 minutes for croutons for salad, or use the cubes in cornbread dressing.
- Creamed corn version: Stir ¼ cup creamed corn into the batter and cut the buttermilk to ½ cup for an extra moist crumb.
If it does not turn out right
- The top is dark but the center is raw
- The air was too hot for a dense batter. Bake at 320 °F, not higher, and cover the pan loosely with foil for the last 7 minutes if the top is already deep gold.
- The cornbread is dry and crumbly
- Too much flour or too much baking time. Measure the cornmeal and flour by spooning into the cup, and check for doneness at 20 minutes. Do not overmix.
- The edges are pale
- Preheat the empty metal pan in the basket for 3 minutes with a thin film of butter or oil in it (skip the parchment round), then pour in the batter. A hot buttered pan creates the crisp golden edge you get in cast iron.
Questions and answers
How long does cornbread take in the air fryer?
A 6-inch pan of homemade cornbread bakes for about 22 minutes at 320 °F. Boxed mix in a similar pan takes 18–22 minutes, and muffins take 10–12 minutes.
Can I make boxed cornbread mix in the air fryer?
Yes. Mix one 8.5 oz box as directed, pour it into a greased 6-inch pan and bake at 320 °F for 18–22 minutes. If the batter fills more than two thirds of the pan, make muffins with the rest.
Can I make cornbread without buttermilk?
Yes. Stir 2 tsp lemon juice or white vinegar into ¾ cup regular milk and let it stand for 5 minutes. The result is just as tender.
Can I bake cornbread without a pan?
Not with wet batter, because it would run through the basket. Use a pan, a silicone mold or paper muffin cups. Cornbread muffins work well in silicone cups.
