Hash Browns in the Air Fryer

Air fryer hash browns come out crunchier than from a skillet or oven and need almost no oil. Frozen hash brown patties go straight from the freezer to the basket and are golden in about 12 minutes, with no thawing and no splattering. This page covers the frozen patty method, plus how long shredded hash browns and homemade hash browns from fresh potatoes take.

Why the air fryer works for hash browns

A hash brown is a thin layer of shredded potato, and its whole appeal is the contrast between a crunchy outside and a tender inside. In a skillet it takes a lot of oil and constant attention, and in the oven the surface often stays pale. The air fryer moves very hot air across both sides of the patty at once, so the surface dries and browns quickly while the inside warms through.

Frozen patties are par-cooked in oil at the factory, and a hot, dry air stream finishes the job without adding any grease. That is why the result is crisp rather than greasy. The one thing that goes wrong is crowding. Overlapping patties trap steam and turn soft, so always use a single layer.

How to make hash browns in the air fryer

Tap a time to start a timer.

  1. Preheat Preheat the air fryer to 400 °F for . A hot basket sets the surface of the patties right away, so they crisp instead of steaming.
  2. Prepare the patties Take the patties straight from the freezer. Do not thaw them, because thawed patties turn soft and fall apart. Brush both sides lightly with the oil, or spray them.
  3. Load the basket Lay 4 patties in a single layer without overlapping. Most 4 to 6 qt baskets fit 4 standard patties at a time, so cook the second batch afterward.
  4. Cook and flip Cook for , flipping the patties carefully with tongs after . They are done when both sides are deep golden brown and crisp at the edges.
  5. Season and serve Sprinkle with the salt and pepper while the patties are still hot, then serve right away. Hash browns lose their crunch within about .

Tips

  • Never thaw. Frozen patties cook best straight from the freezer, and a thawed patty can break when you flip it.
  • Wring fresh potatoes dry. When you shred your own, squeeze the potatoes in a towel until almost no water comes out. Wet shreds stay pale.
  • Give them room. If the basket is full, you will get steamed, soft patties. Two batches beat one crowded one.

Making hash browns from fresh potatoes

For homemade hash browns, shred 1 lb of russet potatoes on a box grater, rinse them in cold water until it runs clear, then wring them completely dry. Toss with 1 tbsp oil and ½ tsp salt, press into loose bundles about ½ inch thick and cook at 380 °F for 15 to 18 minutes, turning halfway. Because the shreds are raw, they need more time than frozen patties. If the shreds are matted together, they are still too wet.

What to serve with hash browns

Hash browns are a breakfast staple next to scrambled eggs, bacon or sausage patties. Add ketchup, hot sauce or sour cream on the side. They also work as a base for an omelet plate or as a side with burgers at lunch.

Storing and reheating

Cooked hash browns keep for 3 days in a sealed container in the refrigerator. Reheat in the air fryer at 375 °F for 3 to 4 minutes, until hot and crisp. Do not use the microwave, which makes them rubbery. Keep unused frozen patties in their bag, pressed flat and sealed, so ice crystals do not build up.

Variations

  • Cheesy: Sprinkle 1 tbsp shredded cheddar on each patty for the last minute of cooking (not dairy-free).
  • Loaded: Top with crumbled cooked bacon, sliced scallions and a spoonful of sour cream (not vegan or dairy-free).
  • Breakfast sandwich: Use two patties as the "bread" around a fried egg and a slice of cheese (not vegan or dairy-free).

If it does not turn out right

The hash browns are soggy in the middle
The basket was overcrowded or the patties were thawed first. Cook from frozen in one layer and add 2 minutes if they still feel soft.
The patties stick to the basket
Brush both sides with a little oil and brush the basket lightly before loading. Wait until the surface is crisp before you flip, since a set crust releases cleanly.
The edges burn before the center is hot
Your air fryer runs hot. Lower the temperature to 375 °F and add 2 to 3 minutes.

Questions and answers

How long do frozen hash browns take in the air fryer?

Frozen hash brown patties take 10 to 12 minutes at 400 °F, flipped halfway. Loose shredded hash browns take 12 to 15 minutes at 380 °F, shaking the basket every 4 minutes.

Do I need to thaw hash browns before air frying?

No. Cook them directly from frozen. Thawing makes the potato release water and the patties turn soft or break apart.

Can I use oil spray, or no oil at all?

Most store-bought frozen patties are par-fried, so they crisp with no extra oil. A light spray gives deeper color and a more even crunch.

How do I make hash browns from fresh potatoes?

Shred 1 lb of russet potatoes, rinse until the water runs clear, wring them very dry in a towel, toss with 1 tbsp oil and salt, and cook at 380 °F for 15 to 18 minutes, shaking often.
