Why the air fryer works for crab rangoon
Traditional crab rangoon are deep-fried at around 350 °F, which blisters the wrapper and heats the cream cheese filling at the same time. The air fryer gets a similar result with dry heat and a thin layer of oil. The wrapper puffs, browns and crackles, while the filling stays creamy.
The wrapper is the most important part. A wonton wrapper is thin dough with almost no fat, so it needs a spray of oil on all sides, and it needs to be sealed tightly. Any gap lets steam from the filling push through the seam, and the cream cheese leaks into the basket.
How to make crab rangoon in the air fryer
Tap a time to start a timer.
- Make the filling In a bowl, mix the softened cream cheese, crab, scallions, soy sauce, Worcestershire sauce and garlic powder until smooth. Squeeze the crab dry first, because extra liquid makes the wontons burst.
- Fill the wontons Put 1 heaping teaspoon of filling in the center of a wrapper. Dip a finger in the water and wet all four edges of the wrapper.
- Fold and seal Bring the four corners together over the filling to make a pouch, pinch the seams closed and press out the air. A tight seal keeps the filling inside.
- Preheat and spray Preheat the air fryer to 375 °F for . Spray the rangoon on all sides with cooking spray, because dry wonton wrapper cooks up pale.
- Cook Place 8 to 10 rangoon in a single layer, spaced apart, with the seams up; a 5–6 qt basket needs 3 batches for all 24. Cook each batch for , shaking the basket gently after , until the wrappers are golden and crisp.
- Check and cool The center should read 165 °F on an instant-read thermometer. Let them cool for , because the filling is very hot.

Tips
- Keep the filling cold-ish. Softened cream cheese mixes easily, but a filling that is too warm gets runny. If it is soft, chill it for 15 minutes.
- Keep the wrappers covered. Wonton wrappers dry out quickly. Keep the unused ones under a damp paper towel while you fill.
- Do not overfill. One heaping teaspoon is enough. More filling means more pressure and more bursting.
Folding styles and other shapes
The classic pouch is easy, but a simple triangle also works: fold the wrapper diagonally, seal the edges with water and cook for 7–8 minutes. For party food, you can also spoon the filling into small cups of dough or roll it in larger wrappers like spring rolls. Stick to wrappers rather than wet batters, since batter will not hold in an air fryer.
What to serve with crab rangoon
Serve crab rangoon hot with sweet chili sauce, duck sauce or a soy-and-rice-vinegar dip. For a casual game day spread, put out chicken wings and onion rings next to them. For takeout night at home, add a simple fried rice or broccoli.
Storing and reheating
Keep cooked crab rangoon for up to 3 days in the refrigerator in a sealed container. Reheat them in the air fryer at 350 °F for 3–4 minutes until they reach 165 °F in the middle. Uncooked, folded rangoon freeze well on a tray and then in a bag for up to 2 months. Cook them from frozen and add 1–2 minutes.
Variations
- Spicy: Add 1 tsp sriracha to the filling.
- Jalapeño: Stir in 1 tbsp finely chopped pickled jalapeño.
- Baked dip: Spread the filling in a small oven-safe dish and cook at 325 °F for 10–12 minutes. Serve with wonton chips.
If it does not turn out right
- The crab rangoon burst open
- Use only 1 teaspoon of filling, wet all four edges and press out the air. Squeezing the crab dry also prevents a watery filling.
- The wontons are pale and tough
- Spray every side of the wrapper with oil before cooking. Wontons that are not coated dry out instead of crisping.
- The wrappers fly around the basket
- Light, dry wrappers can be lifted by the fan. Spray them well, which adds weight, keep the seams up and space the rangoon apart.
