Tips
- Cube from the thick end. Cut the breast lengthwise into strips first and then into cubes, so the pieces are the same size and shape.
- Dry first. Moisture on the chicken makes the cornstarch clump. Pat the cubes dry, then toss.
- Sauce at the end. Sticky sauces like honey garlic and teriyaki burn in the basket, so they go on after cooking.

- Panko: Dip the cubes in beaten egg and panko instead of cornstarch, and spray with oil (not gluten-free).
If it does not turn out right
- The bites are pale and not crisp
- The cornstarch was not evenly coated, or the basket was overcrowded. Toss until the powder disappears into the oil, and cook in two batches if the cubes pile up.
- The coating turns gummy
- Too much cornstarch makes a paste. Three tablespoons is enough for 1½ lb of chicken; shake off any loose clumps before cooking.
- The chicken is dry inside
- The cubes were too small or cooked too long. Keep them at 1 inch and begin checking at 8 minutes.
